In summertime, I like to use this stone fruit salsa over fish or chicken, or as a topping for Greek yogurt.

Ingredients

    4 peaches, chopped
    2 cups cherries, pitted and chopped
    2 small or 1 large jalapeno pepper, diced
    1 lime, zested and juiced

Tips

Salsa simply means "sauce" in Spanish, and although we usually think of pico de gallo--that piquant combination of tomatoes, peppers, onions, and cilantro--as salsa, you can use any combination of fruits and vegetables.

Use any combination of fruits here: nectarines, plums, cherries, or peaches.

If you like a spicier salsa, leave the ribs and seeds in the peppers; if you don't like spice, remove them.


Directions

Combine all ingredients. Allow to rest at room temperature for 20 minutes before serving.
Makes 2 1/2 cups; 1/2 cup per serving

    Really, really good. I got a container of cut-up fruit from the market and chopped everything up small, then added a couple fresh serrano peppers (without the seeds and ribs) and the juice from three limes.     Could you use a mild bell pepper, atable spoon of pepper jelly or a dash of hot sauce? Actually just serve as is without the peppers. Recently I mixed bananas, blueberries and nectarines. Daughter loved it. - 8/12/10
