Introduction

Ingredients

    2 cups vegetarian "burger" crumbles
    1 medium onion, chopped
    2 tsp olive oil
    1-15oz can tomatoes
    2 cloves garlic, crushed
    2 cups mushrooms
    1 cup vegetable broth
    several sprigs fresh tarragon
    salt and pepper to taste

Directions

Saute' onion in olive oil until it begins to soften.
Add garlic and cook for 1 minute.
Add mushrooms and cook until wilted and give off their liquid.
Add remaining ingredients and bring to a boil.
Reduce heat and simmer, uncovered until desired consistency is reached.

    vegetarian crumbles are a generic way of saying Boca or Morningstar Crumbles.
    I'm looking forward to giving this a try! If you can find it, try to use Full Circle Organic Vegetable Broth because it's the lowest sodium content I've found for vegetable broth.

    This was great. I did end up adding mushrooms, zucchini, an extra can of tomatoes, and a 2 tbsp of red wine and serving over brown rice, but still an excellent recipe. - 4/17/09

    This was the first time I'd tried the soy crumbles and was pleasantly surprised - even my meat eating husband liked this! We ate it with mashed potatoes and will definitely make it again. - 7/1/08
