Introduction

This is one of our family favorites! Although it's pretty low in calories and fat (for fettuccine alfredo), it has plenty of flavor. This looks really good, too, so we make it sometimes when company comes. Hope you enjoy it as much as we do! This is one of our family favorites! Ingredients

    16 oz fettuccine
    2 boneless, skinless chicken breasts
    10 fresh sliced mushrooms (optional)
    4 Tbsp butter, divided
    2 Tbsp flour
    1 tsp dried parsley
    1/2 tsp onion powder
    1/2 tsp salt
    1/2 tsp pepper
    2 cups 2% milk
    1/2 c grated Parmesan cheese

Directions

Prepare fettuccine according to directions; toss with 2 Tbsp butter.
Meanwhile, melt remaining butter (2 Tbsp) in large saute pan. Add chicken, cut into bite-sized pieces (10 fresh, sliced mushrooms are a nice addition, too--not included in this calorie count). Cook approximately 10 minutes or until chicken is done.
Stir in flour, parsley, onion powder, salt, and pepper. Add milk; stir continuously while bringing it to a boil until mixture thickens slightly. Add fettuccine and Parmesan cheese, tossing to coat.

Serve immediately. Makes approximately 10 (1 c) servings. Excellent with sides of salad, corn, and French bread!

    Just want to suggest to add the flour first,cook it on low heat for a few minutes before adding the remaining engredients. This takes the raw flavor from the flour that someties comesthrough...Chef Jim - 6/4/09

    Nice recipe taste great, how do you get 10 1 cup servings when there is only 2 cups of liquid. I keep seeing recipes with 200 calories but the portion yield is hard to understand - 10/25/08

    Hey, KMartin--glad you like it. This recipe is not just the alfredo sauce--the noodles and chicken add quite a bit of volume as well. So if you make the entire recipe, you'll end up with 10 cups of food, which can be divided up into 10 (1 c) servings. Each cup of it is 206 calories. Hope this helps.

    I applied the seasoning to the chicken, seared it, and added Italian seasons and garlic. I also added broccoli florets, Made enough for two meals and the family went bonkers for two days in a row by request!!! Yum-O - 3/4/09

    Very good. I did not put in the mushrooms and used 1% milk; also sauteed the chicken in olive oil instead of the butter and tossed the fettuccine with 1 TB butter instead of the 2, which worked fine. - 1/5/08

    Be careful of the calorie count. 16 oz of most pastas would be 1600 calories (200 calories per 2 oz) Even if you split it between 10 servings, that's 160 calories just for the pasta-not counting sauce or chicken. The nutritional breakdown shows 64 calories from the pasta- WRONG! - 1/16/10

    Thanks for pointing this out! I haven't been paying much attention to the comments on this recipe til today, & I checked on it. Apparently 2.5 years ago when I punched in the nutritional info, SP's "Spaghetti, cooked (pasta)" averaged out to about 100 calories off/serv. Sorry for the misinformation.

    Creamy and delicious! Will be a new weeknight staple. I added a couple crushed garlic cloves while cooking the chicken and topped it with fresh chives. - 2/2/09

    This recipie was ok. I doubled the amount of cheese and it still didn't taste cheesy or like alfredo to me, but since it is much healthier than the original alfredo and since my husband liked it, I will probably be making it again. - 1/4/09

    I was surprised how delicious this was. I didn't add the mushrooms or Parmesan cheese, but it was still wonderful. I also recommend trying it with garlic powder instead of onion powder--gives it a kick! - 6/5/08

    Delicious! I make this without any butter by using olive oil to cook the chicken and vegetables (I add the mushrooms as well as julienne cut onions and colored peppers and broccoli or asparagus). The pasta I just rinse a second time before adding it to the pot, eliminating the need for butter. - 5/1/13

    AMAZING TASTING & SUPER QUICK. I used seasoned salt vs. regular salt , an extra 2 TEASPOONS of flour , whole wheat pasta & seasoned the chicken in some Mrs.Dash Italian Medley .. SO GOOD. Better than some restaurant Alfredo's I've had. But of course , every one has their own preferences .. - 3/29/11

    I used pork loin (it is very lean and followed the recipe I used nonfat can milk instead with enought water to make 2 cups. Also used better balance butter. Was fantasic all the men in the household loved it!!! - 3/12/09

    This was the first time I attempted an Alfredo Sauce, it was okay. I think next time I need to preseason the chicken, Add some garlic to the recipe Or something to add flavor to it, I could have lost some of the flavor by using olive oil, instead of butter. I will make this again. - 2/4/09

    JMBOWMAN-- There have been a few occasions where the ckn has tasted bland, though I have followed the recipe exactly. I haven't been able to pinpoint why. So maybe trying it with a different brand of chicken would be an option. Sorry that it turned out that way for you this first time.

    Made this using rigatoni since it was the only pasta on hand. Only other modification was using 1/2 tsp garlic powder in addition to the other spices. Was a huge hit with the family, and very satisfying portion size for surprisingly little calories. - 8/25/08

    Excellent recipe! I found I needed to add a bit more milk to keep the sauce creamy and not have it start lumping. I breaded the chicken breast lightly with Italian Seasoned bread crumbs before searing, and used whole wheat bowtie pasta instead of fettucine. Absolutely delicious! - 3/21/12

    This was a pretty good base recipe. It had just the right amount of sauce for good flavor, but didn't drown the noodles. It was a bit bland, though. Needed extra salt, and I had to add 2 tsp garlic powder. Next time I'll try sauteeing a tbsp. minced garlic or 2 w/ the chicken. Pretty good, though! - 11/24/09
