Introduction

A yummy treat - one 93 cal cookie is very satisfying when you crave something sweet and chocolaty! A yummy treat - one 93 cal cookie is very satisfying when you crave something sweet and chocolaty!
Number of Servings: 48

Ingredients

    1 cup all purpose flour
    1/4 cup ground flax seed
    1/2 tsp salt
    3/4 cup butter/marg
    1/2 cup granulated sugar
    1/2 cup brown sugar
    1/2 cup crunchy peanut butter
    1 egg
    1 tsp vanilla extract
    1 cup semi-sweet chocolate chips

Directions

Combine dry ingredients in a small bowl. Beat butter, sugars, and peanut butter until creamy. Beat in egg and vanilla. Gradually beat in flour mixture. Stir in chocolate chips. Drop tablespoons of dough onto ungreased cookie sheets. Press down slightly to flatten into 1 1/2" circles.

Bake in a preheated oven at 375 F for about 8 minutes. Let cookies stand for a couple of minutes once removed from the oven, then transfer to wire racks to cool completely.

Makes about 4 dozen cookies.

These cookies freeze well.

    Amazing! Huge hit! Big thanks for this!
    Made a few mods: Whole Wheat Flour, Golden Flaxmeal, Salt Substitute (Potassium), Smart Balance Buttery Spread, and 100% all-natural PB (unsalted). All-natural PB has less "punch" than hydrogenated PB, so I used 1 Cup. Still killer!

    LOVE these!!! make them weekly no kidding. I also use only whole wheat flour and cane sugar. SOOOOO good! Strangley I use flax seeds (not grounded type) for texture and they still come out sooo good! - 1/31/11
