Introduction

Ingredients

1 cup all purpose flour
1/4 cup ground flax seed
1/2 tsp salt
3/4 cup butter/marg
1/2 cup granulated sugar
1/2 cup brown sugar
1/2 cup crunchy peanut butter
1 egg
1 tsp vanilla extract
1 cup semi-sweet chocolate chips
Directions
Combine dry ingredients in a small bowl. Beat butter, sugars, and peanut butter until creamy. Beat in egg and vanilla. Gradually beat in flour mixture. Stir in chocolate chips. Drop tablespoons of dough onto ungreased cookie sheets. Press down slightly to flatten into 1 1/2" circles.
Bake in a preheated oven at 375 F for about 8 minutes. Let cookies stand for a couple of minutes once removed from the oven, then transfer to wire racks to cool completely.
Makes about 4 dozen cookies.
These cookies freeze well.

This is a FANTISTIC cookie recipie- It was simple enough to make with my 5 and 3 year old and was super tasty. This is going to be added in as one of my TOP PB cookie recipes!!!! - 5/24/08

Thanks for the feedback - I appreciate your comments. I also make this one with my young children. I think they enjoy making them more than eating them, although I can't say the same for me. :)
