Introduction

This classic chilled tomato soup is chock full of garden-fresh vegetables, cholesterol free, and made with very little added oil. This classic chilled tomato soup is chock full of garden-fresh vegetables, cholesterol free, and made with very little added oil.

Ingredients

    • 4 cups tomato juice
    • 1/2 medium onion, peeled and coarsely chopped
    • 1 small green pepper, peeled, cored, seeded, and coarsely chopped
    • 1 small cucumber, peeled, pared, seeded, and coarsely chopped
    • 1/2 teaspoon Worcestershire sauce
    • 1 clove garlic, minced
    • 1 drop hot pepper sauce
    • 1/8 teaspoon cayenne pepper
    • 1/4 teaspoon black pepper
    • 2 tablespoon olive oil
    • 1 large tomato, finely diced
    • 2 tablespoons minced chives or scallion tops
    • 1 lemon, cut in 6 wedges

Directions

1. Put 2 cups of tomato juice and all other ingredients except diced tomato, chives, and lemon wedges in the blender.



2. Purée.



3. Slowly add the remaining 2 cups of tomato juice to pureed mixture. Add chopped tomato. Chill.



4. Serve icy cold in individual bowls garnished with chopped chives and lemon wedges.



Yield: 6 servings--Serving Size: 1 cup

    we like our gazpacho chunky so we didn't puree it, otherwise ok. Left out olive oil...even tho healthy fat, just wasn't needed! Daughter thought needed something...put in 1tbs horseradish...perfect. - 3/6/09

    Yum yum yum! I also added about a tablespoon of horseradish, because it turned out that I didn't have cayenne pepper at home like I thought. The horseradish was yummy! You could add all sorts of stuff to this soup! - 8/22/09

    I love gazpacho, but I also add some balsamic vinegar. Yummm. Personally, I love the taste of olive oil, and my weight loss does better when I get some healthy fat instead of going nonfat. - 10/11/09

    I made this today for dinner - with a few adjustments -delicious!
    omit cucumber - replace w/ zucchini
    omit worcestershire sauce
    omit scallions/chives - replace w/ 1 bunch cilantro
    in addition to fresh tomato, add a can of diced tomato with green chile
    1/4c corn
    1/4c pinto beans

    Great recipe but I also don't see the point/need for the olive oil. I don't like the taste of oil to begin with, lol, but I don't see how it adds anything to the recipe other than calories and fat. Other than that, it's a great recipe. :) - 8/23/09
