Ingredients

    1 lb ground turkey
    1/2 C. chopped celerty
    1/2 C. chopped onion
    1/4 cup chopped green peopper
    1 (14 1/2 oz.) canned diced tomatoes (mexican style is good)
    1/8 tsp salt
    1 C. grated fat free cheddar cheese
    1 C, fat free cottage cheese
    1/4 C. egg beaters
    1/2 c. Chicken broth
    8 corn or flour tortillas
    1/2 C. grated fat free cheddar cheese



Directions

Cook meat. Drain well. Combine next 3 ingredients and saute over medium heat in chicken broth. Add cooked meat after vegetables are cooked. Add tomatoes and salt, stir well. Bring to a boil and reduce heat. Simmer for 10 - 15 minutes. Meanwhile combine cottage cheese, 1 C. grated cheese and egg. Set aside. Cut the tortillas inton strips. Spray 13 X 9 casserole with cooking spray. Spoon 1/3 of the meat mixture in the dish first. Spoon 1/2 of cheese mixture on top of that. Arrange tortilla strips over cheese. Repeat layers ending with extra 1/2 cup grated cheese. Bake at 350 degrees for 30 minutes. Let stand 5 minutes. Cut into 12 servings.

    I can't say this is 'Incredible!', but I can say it was very, very good! My 8 and 3 year old weren't huge fans, but they did eat it, and the crispy cheese covered tortilla's strips on top were a big hit. lol Hubby and myself really enjoyed this one though. Will definately make again! Thanks! - 5/22/08

    I used salsa instead of tomatoes and low-fat colby jack for the cheddar cheese. This is very good as a meatless recipe when you add drained black, pinto or kidney beans. I also omitted the egg in this version. I'm lazy, so I just halve the corn tortillas. It's a very good, versatile recipe. - 4/26/08

    Is that suppose to be 1/2 cup of chicken broth or 1.2 cups? Should canned tomatoes be whole or diced? - 5/6/08

    It should be 1/2 Cup chicken broth and the tomatoes should be diced. I've used the mexican style diced tomatoes or you can use salsa.
