Ingredients

    1 9-inch frozen pie crust , 1/4 c.onion , 1 c. fresh spinach ,1/4 c. sliced mushrooms, 1 egg ,1 c. egg beaters ,2 tablsp. flour ,salt ,pepper , 1 c. 2% chedder cheese ,1/4 c.1%milk

Directions

Saute chopped onion in 1 teas. olive oil until tender. Add chopped spinach and sliced mushrooms,saute about 3min. ,set aside. Beat egg and egg beaters,then add milk , flour,salt and pepper to taste.Mix in the cheese, onion, spinach,and mushrooms. Add to the pie crust and bake at 350 for 40 to 45 min. (less time if custard like center is preferred.) Cover crust with foil if browning to soon.

    I used the garden veggie egg beaters, which have onions, peppers and herbs in them, so I omitted the onions. I also cut down on the cheese and it turned out great! Definitely a make again recipe! :) Also used skim milk. - 1/14/08

    Love this recipe! I use southwestern egg beaters (omit the onions), omit the mushrooms (because they tend to get slimy), add extra spinach, and usually use a combination of cheeses. Today, I used half cup of crumbled feta and a half cup of Trader Joes Lite shredded 3 cheese blend. - 9/6/16

    I used skim milk and whole wheat flour and added 2 cups of spinach since I love spinach. Calories are probably higher since I had regular sharp cheddar and not 1% cheese. This was a wonderful and easy meal to make and I am definitely adding it to my permanent recipe file. - 12/24/07

    Very Good
    It seems the pie crust we bought was too sweet or something, so it made the bites i had with crust in it taste weird. Will try it again with a different crust, probably. Egg Beaters aren't really my thing either, sadly. It was pretty good overall. :) - 11/21/07
