Number of Servings: 12

Ingredients

    10 cups leafy greens (kale, chard, spinach, collards)
    6 eggs
    1/2 cup bread crumbs
    1/3 cup grated Parmesan or Romano cheese
    1 tbsp oil
    1 cup cooked rice

Directions

Chop greens and saute' in oil.
Drain and put in a greased oblong casserole (eg. 12x8x3). Stir in rice and beaten eggs.
Season with salt and pepper.
Sprinkle with bread crumbs and cheese.
Bake at 350*F for 25 minutes.
Note: a grated zucchini also tastes well in this dish.

    While trying to get more greens in my program I decided to try this. It is excellent. Based on the respones I read, I added chopped garlic and onions to the oil when I cooked the greens. Used Panko for the bread crumbs and brown rice instead of white. But really enjoyed. - 7/16/09

    I made this with spinach and zucchini, I added garlic and onion and mixed the cheese in. I made a smaller casserole. I used homemade whole grain breadcrumbs andbrown rice served with a side of tzaziki sauce (froma recipe on this site). It was delicious! - 2/12/08

    I used Egg Beaters with this and topped it with wheat germ instead of bread crumbs, used light cheese. Cut the cholestrol and fat way back. - 2/1/08

    I added Rocket (could also use Watercress) for a peppery flavour. Excellent dish for boosting iron but BAD for cholesterol! I used wild rice, 3 eggs + 3 tablespoons single cream (low-fat variety) - worked well and quite tasty. - 2/1/08

    I used leftover brown rice and mixed in some kale. I sprinkled on vegan parmesan and no one in my family noticed. Considering it was the first time any of us had collards it was a decent introduction. I'll probably make it again, but just for myself. No one else is willing to eat greens again. - 5/26/12

    The Cholesterol, Sodium & Carbs concern me. Perhaps using egg beaters to reduce the cholesterol, stir frying with cut up turkey bacon & onions for flavo, leave out the bread crumbs & salt, but add fresh cilantro & parsley. I would use brown rice & definitely grated zucchini & carrots too! - 2/1/08
