Ingredients

    2 Tbs. Olive Oil
    1 Large Onion, sliced
    1 Tbs. Garlic , minced
    1 can White Beans
    4 Cps. Kale, cleaned, drained and roughly chopped
    1 Cp Vegetable Broth
    salt and pepper to taste

Directions

Saute onion in olive oil on low heat until caramelized. Add garlic after onions are done and saute 1 min . Turn heat up to medium high and add remaining ingredients. Cook until kale is wilted and beans are heated through. Can be served over rice.

    Delicious. I served it over mashed potatoes. I'm not veg and I needed some extra protein and calories, so I added some sliced cooked turkey sausage. - 11/13/08

    This is the second time I made this dish...it was excellent! I took advice from one of the other reviews and chopped up some sweet potatoes and ate is as a stew. My husband not only ate it...but enjoyed it too! - 1/27/08

    This is delicious. I used cannelini beans and cooked it a bit longer to get the kale softer. I used some low sodium chicken broth since all of the veggie broths in the store have so much sodium in them. I used red onions, which made it nice and colorful. I really liked this. - 4/19/10

    I substituted red chard for the kale, but the overall dish is very tasty and healthy. I would make it again and try it with kale. I served it with baked sweet potatoes...yummy - 9/18/07

    Very yummy... of course - I forgot how long it takes to caramelize onions so by the time it was ready - everyone was starving! I knew to get my fam to eat it - I would need to add some meat... so I added some chicken sausage. My dd managed to eat AROUND the Kale - but everyone else really liked it! - 10/13/11

    swapping out rehydrated beans for the canned version lowers the sodium count significantly. I also added just enough water to steam, no significant loss of flavor and a further reduction of sodium - 8/11/11

    I'm trying to get more calcium in my diet by eating kale. This recipe fit the bill -- it's was quite flavourful! The beans and broth *do* add a lot of sodium, so I used low sodium versions. Also, I added a splash or two of Balsamic vinegar when I did the caramelised onions. Thanks for the recipe! - 2/7/11

    This tastes really good, but the amount of sodium in it is crazy!! I drained the beans to try to cut down on the amount of sodium, but wow. I also used a low sodium broth. It is a very tasty dish and a nice way to use kale. - 2/8/10

    I substituted spinach for the kale, because I had it on hand. Pretty easy to make and very tasty. We had it as a side dish and even my husband ate it (not a big veg fan). - 11/8/07
