Ingredients

    1 sm can of pumpkin
    1 box cake mix (spice is good)

Directions

mix the 2 ingredients. Spoon onto cookie sheet. Bake at 350* fo 5-10 min, depending on size.

Amount varies based on size of cookie. I like to dust with powdered sugar to add viual appeal.

    I used Gingerbread cake mix and added pumpkin pie spice - my cookies (or cakies) took 15 minutes to cook. The best part - my kids who are allergic to eggs and peanuts CAN have this treat! - 2/11/10

    Very Good
    I made these into 12 hearty muffins. I really enjoy the taste of pumpkin in the fall and winter. These muffins are great for breakfast. The batter was quite stiff and difficult to work with but the results, with added raisins, were great! - 12/28/11

    My daughter is smart enough to consider pumpkin a veggie, so she refuses to eat it. I just figured out that if you mix it with chocolate cake mix she has trouble even waiting for them to cook! She kept eating the batter til I ran her out of the kitchen. I hope the final product entices her too! - 10/9/10

    I made these with Spice Cake mix and also with a Chocolate Cake mix. In the chocolate version I added some chocolate chips. Both variations were very good. So easy to make. They are very moist and turned out great. Between the 2 boxes there were 100 cookies so I am freezing half for later. - 4/27/10
