Introduction

A terrific dish of chicken in a red wine sauce. A terrific dish of chicken in a red wine sauce.
Number of Servings: 4

Ingredients

    Whole chicken, in pieces
    Cajun seasoning, to taste
    1 tbsp extra virgin olive oil
    2 tsp minced garlic
    1 medium red onion chopped
    5 sun-dried tomatoes, packed dry, chopped
    8 Kalamata olives, pitted, chopped
    1/4 to 1/2 tsp thyme
    1 tsp parsley
    1 cup dry red wine (Cabernet Sauvignon)

Directions

In Dutch oven, heat olive oil on medium heat.
Coat chicken in Cajun spice or salt and pepper.
Brown in Dutch oven for approximately 5 minutes on each side.
Remove chicken and brown onion until clear, then add garlic and sun-dried tomatoes.
Return chicken to pot, add remaining ingredients.
Simmer for at least 25 minutes.
Remove skin from chicken before serving with your choice of pasta.

    This was pretty good. I didn't read that it goes over pasta until the end (I'd already made a potato side to go with it) so I just had it plain and it was very tasty. - 3/24/08

    This is fairly easy to make and excellent to eat! The flavors combine and make it so good, slightly exotic, and great for a fancy meal for company. It is a definite "make it again" for our family! - 3/13/07

    Served this for dinner over brown rice and my husband loved it. I added a little flour to thicken the sauce. He wants me to save this recipe to cook it again.Chicken was very tender but darkened outside even though the chicken inside was moist and white. I also used frozen peas instead of mushrooms. - 6/12/13
