Ingredients

    1 box Betty Crocker Super Moist Carrot Cake Mix
    1 15 oz. can pumpkin

Tips

Top with chopped nuts and brown sugar, if desired.


Directions

Mix pumpkin into dry cake mix.
Scoop into muffin tins.
Bake at 400 degrees for 18-20 minutes.

    I want to try making it but I'm confused with people saying they changed the amount of water/eggs etc. Is it not just dry cake mix and pumpkin?? Thats the impression I got... - 9/14/08

    I used a large can of Pumpkin added only 1/2 cup homemade apple sauce (unsweetened) and used Duncan Hines Classic Carrot (with carrots and raisins)... makes 18 muffins calorie difference is 152.6, in the oven now, can't wait to try... yum, and thanks for the idea!!! - 11/12/13

    I added about 1/2 a cup of almond milk and 1 tsp cloves, 1 tsp nutmeg, and 1 tsp allspice. Made it WAY better. - 11/7/13

    Wow! Added 1/2C unsweetened applesauce, pumpkin pie spice, cinnamon and a handful of craisins. YUM! I got 18 muffins out of it, and froze them in baggies, so when I want a yummy snack, pop it in the micro for a few, and viola! MMM Good! - 7/31/11

    Holy hell. Very good. To clear things up about the recipe: You will need to add the oil, water, and eggs in the proportions on the cake box. Just the pumpkin and dry mix doesn't come out wet enough to get into muffin pans. - 2/6/09

    having a warm one now. Used Duncan Hines, instead of Betty Crocker though. My oven's finicky, so had to put them in for a bit longer. They're very moist, but not cooled down all the way yet, so not entirely sure if they're okay. the toothpick came out clean though, so...

    I didn't add any water and was worried about it while they were cooking (after reading some other comments). They turned out perfect though. i made some frosting to put on top (cream cheese would've been best, but I didn't have any. my family loved them! and can't get enough-they are really filling - 11/8/09

    I have made these several times,sometimes adding 1/2 cup of applesauce and sometimes not.I get 22 muffins out of the recipe,lowering the cal count.I will have one for bkfst with a cup of yogurt, as a snack or dessert.I do undercook them just a bit,they come out perfectly moist. - 2/26/09

    I added 1/2 cup applesauce to the mix , and added raisins. I got 24 small cupcakes done in wrappers. I would be tempted to try diced apple and nuts too if i had family that liked nuts. It was good with a light spread of reduced fat cream cheese as well. - 7/18/08

    I love pumpkin so I love this recipe it's so easy to make - I add a little bit of applesauce (between 1/4-1/2 cup) and some cinnamon. These are a big hit with kids too (ages 4,3 and 1) As a special treat I added cream cheese frosting for them this time around but they eat em up plain just fine ;) - 2/26/08

    This was okay. I am going to try making it again with a different carrot cake mix (couldn't find the brand listed in the recipe so we used another.) I added 1/4 cup of water and a handful of golden raisins and dried cherries. I used my mini-muffin pan so each mini-muffin is about 45 calories. - 2/12/08

    I made these with the pumpkin spice muffins of the same thought. I whipped up some cream cheese frosting using light cream cheese. These were a big hit at work. Almost went as fast as the pumpkin ones. Thanks! Oh and I did add a little more spices but didn't add the water. I think they were perfect. - 10/25/07

    The calorie count was higher than I was comfortible with, so I used one can of pumpkin, 2 egg whites, 2 T fat free milk, and 1/2 a box of cake mix. This made 10 large muffins, equals 122 cal per serving. - 9/18/07

    It could be that it's healthier because you leave out the eggs and the oil, adding a 1/4 cup liquid of water or juice improves the dryness problem. I have made other recipe cake mixes doing the same idea - they turn out okay for us- spouse is allergic to eggs. - 9/18/07
