Number of Servings: 8

Ingredients

    6 slices bacon, chopped
    2 cups chopped onion
    4 cloves garlic, minced
    1/2 cup celery, chopped
    1 cup carrots, chopped small
    1 cup mushrooms, chopped
    1 tbsp red pepper flakes (to taste)
    salt and pepper
    1 tsp ea oregano, basil
    5 cups chicken stock (low fat, sodium)
    28 oz can stewed tomatoes
    1/4 cup orzo (or other small pasta)

Directions

In a large stock pot, cook bacon until most of fat rendered. Add onions, garlic, carrots, celery, mushrooms and cook until onions transparent.
Add red pepper flakes, oregano, basil and salt and pepper.
Add chicken stock and stewed tomatoes.
Bring to a boil, and add pasta.
Cook until al dente.
Check for seasoning and adjust if needed.

    Looks like a great recipe. After bacon fat is drained out, I'm sure it is a fine and low in fat. Also, I would try 1 or 2 pieces of bacon and diced ham in this soup too. Good recipe. - 9/20/08

    This is a good soup...loved the flavor from the bacon, garlic, and onions...left out the orzo for gluten free...added a pinch each of rosemary and thyme. - 7/5/08

    When I started these recipes,couple years ago I was eating bacon,chicken skin,butter and white bread etc.
    when I see a flat ewwww from a member I wonder how it is that,as I've discovered,anything can be tweaked with herbs,citrus zest and low fat products.Many of us are learning to enjoy new things.

    Put the bacon crumbles on paper towels to reduce the fat. This looks very healthy to me. Drain the bacon and the pot - but leave the browning flavor in. Sounds delicious. I'm going to make it and enjoy with gusto. - 7/5/08
