Ingredients

    4 skinless chicken breast
    1 cup of sliced almonds
    1 cup of apples
    1 tsp pepper
    1 tbsp of butter (lite)
    2 tbsp of melted butter (lite)


Directions

In a large pot, bring 8 cups of water to boil.
Add chicken breasts and bring to a boil.
Cover and let simmer for 5 mins.
Season with pepper and 1 tbsp butter.
Remove chicken from pot and place on cutting board.
Let cool for 3 mins.
Preheat oven at 350* F.
Slice a horizontal hole halfway through the chicken (do not slice chicken breast completely open).
In a bowl combine melted butter, apples, almonds; stir until all is covered with butter.
Stuff apple and nut mixture into chicken and bake for 10 mins on baking rack.
Serve with aspargus.

    I overcooked the chicken due to it not defrosting& steaming for a 4-ish min in my InstantPot before everything. Also, I'm lazy so I used a food processor for the apples, but that made it so much easier to mix up& stuff into the chicken. Def cut up extra apple& bake with everything. Soooo good!!! - 10/17/19

    Just made this recipe. Followed all the instructions. Chicken took 20 minutes not 10. It was very bland and quite honestly I couldn't finish it. :-( - 9/24/13

    Very Good
    This was very good. Only change I made was to add cranberry's to the apple mixture. My boyfriend loved it. He loved it so much he actually asked if there was leftovers he could take for lunch the next day. Definite two thumbs up - 3/5/08

    i added cinnamon, smoked paprika, rosemary, and basil to the apple mixture, boiled the chicken and then cooked it for close to 20 minutes, it came out pretty tasty. The chicken was moist and tender. It was so good that I actually ate the leftovers for dinner the following night. - 4/10/07

    I thought this was very good, and will definitely make it again! I did doctor it some with some rosemary and basil, but it didn't need too much. I used gala apples, and I think their extra sweetness really helped the flavor of the chicken. I also used half butter, half olive oil. - 4/6/07

    As is, this recipe is good. The chicken is so moist! But I agree that it needs some extra kick. I would definitely add brown sugar to really bring the flavor of the apples up a notch! - 4/4/07

    A bit bland at first, We used walnuts instead of almonds. I heated up some apples and chopped walnuts with a dash of brown sugar. I used this as a topping which made it taste much better. Even my kids liked it. - 3/14/07

    It was a little bland. Needed more spices too it, I baked the chicken the second time with a little garlic and basil first, and then stuffed with the apples and almonds helped a lot - 3/13/07
