Number of Servings: 6

Ingredients

    2 12-14 oz pork tenderloins, silver skin and excess fat removed
    2 tsp 5-spice powder, divided
    olive oil cooking spray (recipe calculated with 1 T oil)
    2 apples
    1 large red onion

Directions

Makes 6 servings.

Preheat oven to 450 degrees.

Line baking pan with nonstick foil. Lightly spray foil with cooking spray. Sprinkle 1 tsp 5-spice powder on pork tenderloins and place in pan. Roast pork for 20-30 minutes, or until internal temperature measures 160 degrees.

Meanwhile, saute onion in non-stick pan sprayed with cooking spray until tender. Add 1 tsp 5-spice powder and mix. Add apple slices and saute until mixture is softened and onions are fully cooked. Be careful not to burn the onions.

To serve, slice the pork tenderloins into 1/2 inch slices and top with apple-onion mixture.

    To give the pork a bit more flavour... i cut the pork fillet open and used a meat tendoriser to make it nice and flat... filled it with half the mixture and still topped it with the other half... took longer to cook. And looks mich moe attractive when cut on the plate to - 4/13/10
