Probably the most savory salad I've ever had. Non-salad eaters will like this! with a homemade delicious dijon-parm vinaigrette that tastes really similar to caesar dressing. Ingredients

    ¼ cup olive oil
    1 lb boneless, skinless chicken breast, cut into strips
    1 ½ tsp lemon-pepper seasoning
    1 tsp garlic powder
    2 TBSP white wine vinegar
    1 tsp Dijon mustard
    ½ tsp Worcestershire sauce
    1 large head romaine lettuce, torn into bite-size pieces
    1 cup garlic croutons
    ¼ cup grated parmesan cheese

Directions

Heat oil in non-stick skillet over medium-high heat.
Toss chicken with lemon-pepper and garlic powder to evenly coat. Add to skillet and cook 4-5 minutes, until thoroughly cooked, stirring frequently. Remove from heat. Do NOT drain off the oil.
In a small bowl, combine vinegar, mustard, and Worcestershire with a whisk. Stir into chicken/oil mixture.
In a large bowl, toss lettuce with chicken mixture, croutons, and cheese.

    Just what I need for lunch today. I'll add some fresh spinach, and use chicken that I cooked last night. I'll prepare the dressing using the olive oil with other ingredients listed, then toss with the lettuce/spinach, place chicken on top, followed by croûtons and cheese. - 5/3/10

    I just made this with baby spinach and arugula. I used leftover chicken breast without seasoning from the other day. I like a lot of mustards, but I'm not sure this Dijon was for me in the mixture. Overall, it is something I would make again. - 1/7/13

    Tried this recipe tonight & I didn't care for it! My wife liked it, but I think it had way too much lemon pepper. I wouldn't even use L/P if I made this again. I would just increase the garlic powder while frying the chicken. All I could taste was lemon pepper when eating the chicken. - 4/12/12
