Introduction

Meatloaf in muffins. Meatloaf in muffins.
Number of Servings: 12

Ingredients

    1 lb 93% lean ground turkey
    1 package stuffing mix
    1/2 cup liquid egg substitute
    1 medium green pepper, chopped
    1 medium red pepper, chopped
    1 medium onion, chopped (approx. 1 cup)
    1 cup water
    1 package taco seasoning mix
    Seasoning to taste--I use seasoning salt, black pepper, onion & garlic powders, minced garlic, and occasionally Worcestershire sauce (make to your taste and experiment!)

Directions

Mix all ingredients together. Place a scoop in 12 muffin tins--all of the mixture should be put into 12 tins.
Bake at 350 degree oven for 35 minutes.

    This is a wonderful recipe!! I loved it! I also really like the idea of portioning the meatloaf with a muffin tin. I made this with fat-free ground turkey and substituted homemade veggie broth instead of the water. I will definitely make this again...often! Thank you so much! - 1/11/09

    These are so quick to make and delicious! I used a box of Stovetop stuffing mix (turkey flavor) and a real egg with an extra 1/4 cup water. I also left out the taco seasoning since the stuffing was seasoned. Delicious!! The texture/moisture was perfect too. - 12/11/07

    These are amazing. granted I couldnt find my muffin tin so i made meatballs. I also used poultry seasoning instead of taco seasoning. And I added the dash of A1. Amazing. brought the leftovers to work and they were gobbled up! My boyfriend also loves them! Will make again and again! - 8/14/09

    I changed it up a bit. Added shredded carrots, no taco seasoning and made 5 large turkey muffins. Both my husband and my daughter LOVED them and said that we should have them all the time! This is definitely a keeper!!! - 12/9/07

    I made this tonight for myself and several of my friends (made two batches and made them cake like instead of muffins) and the guys ADORED THEM! They make amazing turkey-burgers as well. I will be making these again soon! - 3/25/07

    LOVE LOVE LOVED this recipe, I never used ground turkey before, I liked it better than regular meatloaf. Thought the muffin pan was a great idea. My 18 year old "hates" meatloaf and he actually liked it. HUGE HIT with the whole family ;-) - 1/13/12

    Loved this recipe. Did not have stuffing mix, used dried bread crumbs. Seasoned with Bell poultry seasoning, worchestershire, minced garlic, chicken stock (no water or taco seasoning). Sprayed Pam on muffin tins. This is a recipe that you can alter to suit your taste. - 5/22/11

    These are great! I used old fashioned oatmeal instead of stuffing mix and I didn't have any problems with them being dry. I also turned them upsidedown for the last 10 minutes of cooking so the bottoms wouldn't be soggy. - 7/13/10

    I didn't know how much stuffing was in a package, since all I have is a turkey stuffing bag, but I guessed and used 3/4 cup and less water. It came out pretty good, although my son took one bite and said "don't like it". Pretty standard for "meatloafy" things. Thanks for the recipe. - 2/20/08

    Even my fiance loved it, and he doesn't like ground turkey or peppers or onions! But it's all blended together so well, it was fantastic!! I didn't use taco seasoning becasue of the sodium, so I subbed other herbs. I also turned it around in the muffin pan to let the bottom brown when it was done. - 1/17/08

    It was incredibly delicious. Everyone in my family loved it even my picky eater sister. Next time i won't use muffin tins though because muffins end up having a soggy bottom and crusty top. I'd rather just make meatball shaped balls. - 12/18/07

    This was such a great way to clean out the fridge. I had 10 oz. of leftover raw ground turkey and a thawed peppers and onion mixture that was on the verge of going bad. I seasoned everything up really well. Next time I will omit the taco seasoning though. My boyfriend ate 6 of these! - 12/14/07

    I subbed grass fed beef for the turkey and used real breadcrumb stuffing instead of a stuffing mix and it was very good! I rarely make something the same way twice so next time I may leave out the taco seasoning and try a thai seasoning instead. - 12/13/07

    Ground turkey is usually so dry when I make it, but the stuffing made it so soft and moist. I used 2 cups of stuffing mix, 4 egg whites instead of egg substitute, and a dash of A1 sauce. I broke up one muffin the next morning and mixed with egg to make a hash. Delicious! - 12/11/07
