Thank you for sharing! The muffins tasted so good and were really filling. I just have to remember to add the nutrition facts for whatever taco seasoning I used.
I didn't use the taco seasoning b/c others mentioned using poultry seasoning. However, I totally forgot to put that in. So.... mine needed some extra salt and pepper to give them some flavor. My mistake!
This is a wonderful recipe!! I loved it! I also really like the idea of portioning the meatloaf with a muffin tin. I made this with fat-free ground turkey and substituted homemade veggie broth instead of the water. I will definitely make this again...often! Thank you so much!
Even my fiance loved it, and he doesn't like ground turkey or peppers or onions! But it's all blended together so well, it was fantastic!! I didn't use taco seasoning becasue of the sodium, so I subbed other herbs. I also turned it around in the muffin pan to let the bottom brown when it was done.
