Number of Servings: 24

Ingredients

    2 scoops vanilla protein powder
    1/2 cup un sweetened apple sauce
    3/4 tsp baking powder
    1 tsp vanilla extract
    2 t splenda brown sugar
    1 T cinnamon
    1 egg
    3 egg whites

Directions

mix ingredients well with whisk
pour evenly into mini muffin tin to make 24 mini muffins
bake at 350 for 12 min

Enjoy with fresh berries and greek yogurt vanilla creme!

    I really liked the taste (I used optimum nutrition vanilla ice cream powder), the texture was something to get used to but I like that I can eat 5 of them for a 100 calorie snack and lots of protein! :) - 6/17/11

    Good
    I wasn't sure how much two "scoops" of protein powder was, but I grabbed a single serving packet (allegedly two scoops) of protein powder from the store and made these with it. I'm not really sure why, but even after 17 minutes in the oven, they were still wet in the middle. Okay taste, though. - 6/14/11
