Ingredients

    2 cans black beans
    16 ounces jarred salsa
    1/2 cup brown rice (uncooked)
    1 pound boneless, skinless chicken breasts

Directions

Place chicken breasts in slow cooker.
Pour beans, rice and salsa over chicken.
Cook on low for 8-10 hours and serve.

    I have tweaked this recipe to fit my family's taste by using salsa verde, and a bag of frozen white corn and using chicken breast on the bone, it comes out much moister! - 6/22/09

    I don't know why I've waited so long to rate this. I've been making this for a couple of years. It is so good, and cheap too! The only thing I do differently is I cut the chicken breast into bite sized pieces and mix it into the beans, rice and salsa before I turn on the crock pot. - 5/17/09

    OMG, this was sooooooo good! I also added 1 1/2 tsp of cummin, 1/2 fresh lime, 16oz sweet white corn. I mix all the ingredients together in lge bowl. I cut up the chicken breast and placed in the bottom of the crockpot, then added the mixture and it turned out fantastic. My DH couldn't get enoug - 10/5/09

    My chicken was already thawed and I only had a couple hours to use the slow cooker, so I seared the chicken and cut it up into cubes, cooked the rice, combined all the ingreadients, and slow-cooked at high for two hours. Delicious!! Can't wait to eat leftovers tonight! - 5/1/07

    I made this and used 2 cans of Rotel, instead of the salsa and used a cup of rice instead of 1/2 cup. I like it because it is easy to make and it has a great taste. - 10/10/07

    Not draining the black beans made everything gray. I drained and rinsed them, added a splash of chicken broth, cumin and minced jalapeno. Great - 10/17/09

    Easy to make and tastes good. Next time I'll use a little less rice. I shredded the chicken before serving to distribute it more. Had lots of leftovers. Froze part, rest I wrapped in whole-wheat tortillas, poured on some enchilada sauce, sprinkled on a little cheese, baked until cheese melted. Yum! - 11/4/09

    This was a pretty good recipe. I added cumin, and corn and used hot salsa. The rice took forever to cook, so I took out the chicken breasts about an hour before it was done so they didn't get too dry. I had a lot of leftover rice and beans, so I am going to make it into a soup. - 1/10/09

    This was very good and so so so easy! I used mild salsa but would probably use medium next time. This reminds me of Chili's Margarita Grilled Chicken. I might also add some lime juice next time too. - 11/28/07

    Easy & Tasty. I drained and rinsed the beans to remove some of the sodium. Added almost a can full of low sodium chicken broth to make up the liquid. Added a cup of corn, 2 t ground cumin and 1/2 t Chipotle chili powder. Also used Green Mountain medium salsa. Could have used more spices. - 9/22/09

    I've made this a lot and it's GREAT! I used regular (45 min cook time) brown rice and didn't think it was mushy. I may have bland tastebuds, but my salsa gave it PLENTY of zip! I love that it has lots of protein and fiber! - 11/11/07

    This recipe was YUMMY! I shared some with my mom and she was going on and on about it. I actually didn't use the slow cooker, though; I put it in the oven (because I forgot that it was a slow cooker recipe...LOL!). It was still delicious, and I will definitely be making this again.     Wow--absolutely love it! One problem though was that even though everything else was done, the rice was still kind of crunchy. Next time I think I'd put the riceion first and then the salsa and beans over the top. - 11/1/09

    This was good, and so easy! I used home-cooked beans for lower sodium and added about 2 cups of the cooking liquid, also added some frozen corn and 2 tsp cumin. We were eating the leftovers for lunch for several days, and it was just as good! - 11/2/09

    SO good! Hubby, 2 young kids and myself loved this! Made my own salsa since I didn't have any jarred which made more than 16 oz, but I also added more chicken, maybe 1.3 lbs. Didn't drain beans either. Put in the crockpot on low for 8.5 hrs- chix SO tender! With jar salsa, 5 min prep only! GREAT!!! - 3/8/08

    I just made this recipe. I love it! I shredded the chicken so it's almost like a stew, plus like a lot of others I added corn. I also didn't have any salsa so I used a can of crushed tomatoes, added and onion and some hot sauce. So good, so easy, so healthy, so cheap. Who wouldn't love that. - 1/11/10

    The flavor was good, but I have to say that the rice was very mushy...no texture left AT ALL. I would say if I made it again, I would either cook way less time, or put the rice in midway thru cooking. - 11/4/09

    I added a can of (no sugar added) corn. I'm also vegetarian so I substituted the chicken breast for Morningstar Farms Chicken Strips. Since those are precooked, I used cooked rice and just heated this on the stove. It was very yummy. Pair it with a big salad! Yum. - 11/6/07

    I have been making this recipe for a few years now and it is still a grand as it was the first time. We take it to parties and cook outs. My 7yr old still loves it! Even my picky Mr. no Black Beans EVER hubby likes it! Its really good as leftovers on a tortilla! - 3/17/07

    Tasty recipe. I added fresh lime juice, cilantro and some Mexican spices and it was great. Also, I strongly suggest you make the rice separately because otherwise it's just a big mush. Enjoy! - 2/6/10

    This recipe is great! I cut the chicken breasts in strips, vary the kinds of beans (kidney, chick peas), add frozen corn and always leave out the rice. It freezes wonderfully. Great! - 2/1/10

    I loved this recipe. I even won a healthy recipes potluck contest at work with it. :-) I did take the advice of some posters and added 1 cup of water, replaced half of the hot salsa with rotel w/ chilis and added corn.     I make something similar to this. However, I rinse my kidney beans(reduces sodium) & instead of rice, I put in a bag of frozen corn(a smidge less carbohydrates) Plus I use my homemade salsa (which really reduces the caustic food chemicals). I just made this 3 days ago, leftovers yesterday was better - 9/23/09

    I added some cumin to this to give it a smoky flavor. My whole family loves this, even my 1 yr. old! It is quite possibly the easiest meal to make! I put a spoonful on a fat free tortilla and spinkle with a tbl of cheddar cheese and add lettuce & tomator for a little burrito. Delish! - 3/7/07

    I made this and it was great....added a wee bit of kick by using medium salsa and some chilli spice...but what was better was the next day turning it into soup by adding carrots and celery and green peas with extra chicken broth...will make again and again with two we got three meals from this. - 2/1/10

    This was soooo good that I almost exceeded my calorie count. I did't have chicken breast so I substituted 4 lean bone-In Pork Loin Chops it turned out great. I reentered each item to get a more accurate nutritional count with the Pork. Can't wait to warm up the left overs. A no brainer to make. - 2/1/10

    This recipe was delicious and very easy to make. I made 1/2 the recipe. I also drained and rinsed the beans and added fresh salsa instead of the jarred. The taste was delicious - even my husband (who is a meat and potatoe guy) loved it! I will add this recipe to my favorites and will make it again - 1/29/10

    I enjoyed making this dish. It was easy but it is missing something. I added water & a can of Ro-Tel becuase I was scared it would dry out. I think I watered down the flavor. I will try it again without the water. - 1/10/10

    My family and I loved this recipe!!! The only thing I changed was the cooking time - 5 hours only, and my chicken was not frozen all the way (it had thawed out in the fridge for one night). This will be my go to recipe when I have no time to put together an elaboraye meal. Thank you - 1/9/10

    I loved this recipe. I put cummin and chipotle on the breasts. I cooked in my dutch oven. Next time I will do what one reader said and shred the chicken to spread through the dish, as it seemed alot of rice and beans left in proportion to chicken. - 9/22/09

    I added some chopped onions, chopped cilantro, frozen corn, and a chopped tomato for added nutrition. But the uncooked rice didn't work for me (it never does). It turned out really crunchy, even after spending so much time in the slowcooker! Tasted fine though. - 1/27/10

    I am trying this tonight with Asperagus and home made salsa (2- fresh roma tomatoes, cilantro, 2-T lime juice, 2 T lemon juice, diced onions & celery -about 1/4 C each in chopper/blender).
