Introduction

Number of Servings: 6

Ingredients

    6 chicken thighs (or a whole chicken)
    2 cups (approx.) light coconut milk
    2 cups (approx.) water
    Thai chili sauce, to taste
    1 cup thickly sliced mushrooms
    2 inches of lemon grass (optional)
    About 1 tbsp fish sauce

Directions

Add all ingredients to slow cooker.
Stir to coat chicken.
Cook for 6-8 hours on low or 3-4 hours on high.
Serve with basmati rice and steamed bok choy or broccoli.

    We love this recipe, I have made a stove top version and have been looking for a slow cooker one.
    I doubled it for a "wet n rainy" weekend and it was AWESOME. I added coconut powder at the end for more flavor without the added calories of coconut milk. FANTASTIC!

    Super easy to make, not much of a coconut flavor (which we love). Next time I wouldn't use the water, but just the lite coconut milk. - 3/7/07

    I browned the chicken pieces in c.p. olive oil and added chopped onion and a tsp of curry powder for extra flavour.
    I used full flavoured coconut cream, left out the water.
    This improved the flavour. I loved it cooked in this way.

    This was really good! I made mine vegetarian and I also left out the fish sauce as well as the water. Will increase curry next time. Served with riced cauliflower mixed in. This will be in my normal rotation. YUM! - 3/24/19

    Really nice, I followed the recipe exact and I think it future I will follow the advice of others and leave the water out and add some onions into the mix, maybe some chillies as well for a bit of extra kick, but all in all, this was a really nice recipe. - 3/16/14

    I should have followed the advice of others and not added the water. There was too much liquid and not a ton of flavor. Served with brown rice and steamed veggies and did take left-overs for lunch. Not a favorite, but it was o.k. - 10/27/11

    Extremely good. I waited and put the lemon grass in towards the end of cooking and it still gave a lot of flavor and aroma. My husband is quite picky and he enjoyed as well. - 9/26/08

    Very easy, followed Tracireuter's advice and left out the water. Added minced garlic to the recipe but something is missing; I felt it needed more flavor (probably because I didn't have lemon grass) and some red pepper flakes to heat it up or something... - 3/15/07
