Introduction

Ingredients

    2 cups asparagus tips, diagonally cut
    1/2 cup plain, non-fat yogurt
    1 teaspoon curry powder
    1 teaspoon fresh lemon juice
    1/4 teaspoon salt
    1/8 teaspoon fresh ground pepper
    12 ounces cooked skinless, boneless chicken breast, chopped
    1/2 cup red bell pepper, seeded and chopped
    1/4 cup fresh cilantro, chopped
    2 tablespoons sliced almonds, toasted
    spinach leaves

Directions

1. Steam asparagus for 2 minutes or until crisp-tender.
2. In a medium bowl, whisk together the yogurt, curry, lemon juice and salt.
3. Add asparagus, chicken, bell pepper, cilantro and almonds and toss to coat.
4. Serve over spinach.
Serves 4.

    Very tasty- the kids and hubby ate every bite too. Next time grapes or apples sound like a good idea, and upping the curry taste also. I will serve the cilantro on the side, though.. not everybody is as crazy for it as I am!! - 8/17/08

    It sounds very good but the nutritional facts dont add up. I went through the information you provided and recaculated as best I could and the sodium/cal/fat and cholesterol were all higher then reported. Its still wouldn't be a un-healthy recipe but its always best to know exactly what your eating. - 6/14/09

    Outstanding! Very satisfying and tasty! I added a handful of seedless grape halves, or your could use diced apples or mandarin oranges too. The calorie count is low enough that even by adding a fruit you are good to go. - 4/14/07

    This is absolutely delicious. Due to a lack of ingredients, I used cumin and coriander for the curry powder and fat free sour cream instead of yogurt. One of the best home cooked meals I've ever had! - 12/10/09

    Very good, easy, low cal not to mention healthy.

    I made this yesgterday and had the refrigerated leftovers today. I like it better cold and I think the curry is over-powering. I will make it again but use less curry and maybe some other spices. Good base to play around with and easy to use with other left overs. - 4/19/09

    This is now a staple in our household. I knew it was good when even my mom (world's pickiest eater) loved it! For a variation, I do away with the curry and substitute 1/2 dijon mustard for the yogurt. YUM! - 7/9/09

    I LOVED this! I added a little extra curry, salt and pepper and the flavors were outstanding. My husband was a fan too. When I asked if there was anything I could do different he suggested raisins. Sounds like some people have tried this addition and like it too! - 4/14/08

    Looked great and tasted great! I used a yellow pepper instead of red, spring mix greens instead of spinach , and skipped the cilantro because those are the things I had at home. My husband thought the presentation and the taste was as good as any restraunt. I will definately make this again! - 3/27/08

    I really liked this receipe. It tasted a little strong at first, probably because of the cilantro, but once it settled overnight, it was very tasty! I felt very healthy eating it with the spinach as well. A well-balanced and filling meal! - 12/7/07

    My husband and I both said, "pretty good." I added some celery and dried apples (I was reaching for raisins and saw the apples and used them instead). I miss the fullness of flavor that mayonnaise gives, but yogurt is a healthier binder. Would make it (or a variation of it) again. - 6/13/09

    I loved this! So did my house mate that has a low sodium - low sugar diet!! I added some cucumber and it made it even more spring fresh tasting! Next time maybe I will add some mandarin orange segments.

    Best Chicken salad ever....especially cause i dont like mayo....This was fantastic!!!! I boiled the chicken and then quick pan fried in a tblsp of olive oil with garlic powder, salt and pepper...it added a nice flavor to the already great ingredients. - 1/18/09

    This was very good. I added leeks and doubled the red pepper. I had a rub for chicken I used on the chicken before I cooked it and that added flavor also. It is so low in calories and so much flavor. Thanks for the recipe. - 4/20/08

    I love recipes like this that are so adaptable to taste and what you have at hand. I skipped the asparagus, roasted a couple red bell peppers and threw them in, added cumin and cherry tomatoes, lime juice instead of lemon, a bit more cilantro and half Greek yogurt, half real mayo.     I made this today and decided that I like it. The curry flavor in the dressing is unique. I did add a teaspoon of sugar to the dressing since it was a little tart for my taste. I also added grapes and used leftover turkey that I had on hand instead of chicken. - 7/10/10

    I used Hellmann's reduced fat mayo - 1/4 cup and tripled the curry. Also added seedless red grape halves. My wife and I thought it was of restaurant quality. Will definitely make again. - 3/18/10

    This salad is terrific. I was given a bag of Lime, Cilantro dressing so I used it instead of the yogurt and cilantro, I didn't have any fresh red pepper but, used roasted red pepper in a jar. The salad was all eaten up at first serving.
