Introduction

Number of Servings: 6

Ingredients

    1 pound lean ground beef
    4 medium potatoes
    1 medium onion, sliced
    1 tsp garlic
    1/2 tsp salt
    1/4 tsp black pepper
    1 tsp dried basil
    2 cans of cut green beans
    2 cans of 98% fat free cream of mushroom soup
    4 oz can of mushrooms, stems & pieces
    1 bell pepper, sliced

Directions

Saute diced onion & bell pepper in butter spray, add ground beef and brown til cooked through. Add canned mushrooms.

Mix mushroom soup and seasonings together.

Put sliced potatoes on the bottom of a baking dish. Add green beans and meat mixture. Pour mushroom soup & seasonings over the meat.

Bake for 30 minutes on 425 degrees or until heated through.

    I used fresh green beans and mushrooms because thats what I had on hand. I also had to thin out the soup with some water.Turned out pretty good but it required a longer cooking time in the oven than stated. I will make this again, thanks for posting it. - 8/12/09

    This was delicious! I did tweak the recipe a little. I added fresh mushrooms and green beans instead of canned. Also used only 1 can of cream of celery soup (that's what I had on hand) instead of 2 cans. - 3/30/10

    use frozen green beans, fresh mushrooms mwhen you can. I added white canelli beans and stewed tomoes with left overs and it was great! only 1 can of cream of mushroom soup - 5/2/12

    Very Good
    This was delicious! Used half ground turkey which absorbs spices. Changed the spice level w/ more pepper (3/4 tsp), garlic (4 cl), and basil (1 1/2 tsp). Also sauteed the garlic with the onions and peppers. Cooked an extra 10 min. for potatoes to get done. Fresh beans and mushrooms would be better. - 6/30/10

    This was my first 'healthy' casserole and it was really yummy. It needs a little ketchup for that missing bite, but 1 tbsp is only 15 calories. I just put small drops on my serving. Requires a decent amount of prep work, before putting into oven, but totally worth it! - 3/18/09

    I substituted peas for the green beans, and added chopped carrots. I also cut out the basil and onion, because I didn't have basil and I don't like onion, but even without making any changes I think this recipe would be great. My husband loved it too. This is a keeper. - 12/10/07
