Ingredients

    1/2 cup unsweetened applesauce
    1/2 cup white sugar
    1/2 cup brown sugar
    1 egg
    1 tsp baking powder
    1 tsp vanilla extract
    1 cup quick oats
    3/4 cup flour
    1 cup shredded coconut
    1 cup raisins
    1/2 tsp cinnamon

Directions

Combine all ingredients in a bowl. Drop batter onto cookie sheet. Bake at 350, for 10 - 12 minutes, until golden brown. Makes 50 cookies.

    The first batch I made with 1/2 the sugars and 2 egg whites instead of a whole egg. They were good, but didn't flatten out at all like a normal cookie would. I think they should be renamed "cookie mounds". The 2nd batch was made with egg replacer and half the sugar. Just as yummy! Will make again! - 9/12/09

    They were hard to get off the pan even when I used a teflon non-stick sheet in the cookie sheet. Other than that, they were easy and very moist. Wish they were a little more crunchy. The coconut really add the pop of taste and chew. Will make them again :) - 1/28/10

    I just made these cookies and used 1/4 cup of sugars each and I was disappointed. I do not think I would make them again. Noting too great. I only go 41 cookies and they were more mounds than flat cookies. Very disappointed. - 2/21/10

    This was alright. I reduced the sugars to 1/4 cup and even used 1/2 Splenda and 1/2 real stuff. Only made about 30 cookies for me. - 1/16/09

    Original recipe must call for 1 teaspoon batter per cookie which is pointless. I reentered nutrition info on my app and it came out to 100 calories per cookie using 2 teaspoons (30 cookies total). Still a nice snack and so delicious. Followed recipe to a T. - 2/19/21

    Raves about this recipe. Short on coconut so only used 1/2 cup and folks were saying it was the perfect amount. First bite reminded me of coconut macaroons, so imagine my next batch with all the coconut. Perfect amt of chewiness and density. I used a rounded tbsp. = 2 dozen. Bkd on parchment paper - 2/6/19

    I have a very very sweet tooth but I followed everyone else's comments about using half the amount of sugar and I totally agree! Using half the sugar is healthier and tastes AMAZING!!! Definitely making these puppies again! Easy, fast, delicious! - 5/12/11

    I thought these were great! I used 1/4 cup of white sugar and 1/4 cup of Splenda Brown Sugar, raw oats, and I also did 1/4 cup of raisins and 1/4 cup of carrob chips to give it a little more...I made them slightly bigger and got 20 great cookies. They were a hit amongst my healthy eating friends! - 4/23/11

    A very sweet cookie. Reducing the sugars next time, like many others did, will help with that issue. Using a 1T scoop, I was able to make 36 cookies. The cookies don't spread out since they have minimal fat, so expect it to stay in a mound. I will try again with a few modifications. - 3/4/11

    I haven't made these cookies yet, but reading the comments about the shape of the cookie brought to mind the fact that sugar liquifies when it's heated and that may be why the finished product was in the shape of a mound. Maybe an increase in applesauce would help them flatten. - 8/16/10

    I used craisins instead of raisins, and they were SO good! I did use sweetened coconut, then forgot to decrease the sugar to account for it, so next time I will do that, they were pretty sweet. Maybe that is why they were so good! ;) - 4/29/10

    I used wheat flour and cut the sugars in half. Next time I use 1/8 cup. I also substituted craisins because I hate raisins. I put it into the calorie counter and made it 30 cookies a batch (much more realistic than pea size cookies) with these changes (except sugar) it was 78 cal per cookie. - 1/7/10

    I thought these were very good but per other reviews I made the following changes:decreased the sugars to 1/4c each, used whole wheat flour, and used 2egg whites instead of 1 whole egg. I accidently added baking soda but they turned out fine. next time I would add a little salt. - 1/15/09

    If the Nutritonal Facts are correct about this recipe then it's a great way to satisfy a sweet tooth! I made a couple modifications to the recipe by cutting the white and brown sugars almost in half (remember, the coconut is already sweetened) and I added a 1/2 cup of walnuts . - 9/15/08
