Ingredients

1/2 cup unsweetened applesauce
1/2 cup white sugar
1/2 cup brown sugar
1 egg
1 tsp baking powder
1 tsp vanilla extract
1 cup quick oats
3/4 cup flour
1 cup shredded coconut
1 cup raisins
1/2 tsp cinnamon
Directions
Combine all ingredients in a bowl. Drop batter onto cookie sheet. Bake at 350, for 10 - 12 minutes, until golden brown. Makes 50 cookies.

The first batch I made with 1/2 the sugars and 2 egg whites instead of a whole egg. They were good, but didn't flatten out at all like a normal cookie would. I think they should be renamed "cookie mounds". The 2nd batch was made with egg replacer and half the sugar. Just as yummy! Will make again! - 9/12/09

Raves about this recipe. Short on coconut so only used 1/2 cup and folks were saying it was the perfect amount. First bite reminded me of coconut macaroons, so imagine my next batch with all the coconut. Perfect amt of chewiness and density. I used a rounded tbsp. = 2 dozen. Bkd on parchment paper - 2/6/19

I thought these were great! I used 1/4 cup of white sugar and 1/4 cup of Splenda Brown Sugar, raw oats, and I also did 1/4 cup of raisins and 1/4 cup of carrob chips to give it a little more...I made them slightly bigger and got 20 great cookies. They were a hit amongst my healthy eating friends! - 4/23/11

I used wheat flour and cut the sugars in half. Next time I use 1/8 cup. I also substituted craisins because I hate raisins. I put it into the calorie counter and made it 30 cookies a batch (much more realistic than pea size cookies) with these changes (except sugar) it was 78 cal per cookie. - 1/7/10
