Ingredients

    1 medium egg
    2 slices reduced calorie whole-wheat bread
    2 tsp butter
    2 tsp dijon mustard
    1 oz cheese of your choices, shredded or sliced
    1 small tomato, thinly sliced
    3-5 fresh basil leaves, washed and roughly chopped
    1 thin slice of red onion, chopped or sliced in half
    salt and pepper to taste

Directions

Heat cast iron or non-stick skillet over medium heat.
Fry the egg (use some cooking spray if necessary to prevent sticking).
As egg cooks, butter one side of each slice of bread, and add mustard to opposite side of one of the slices.
Assemble your sandwich, including the fried egg in this order:
Bread (butter side out)
Cheese
Tomato slices
Basil
Red onion
Salt and pepper to taste
Fried egg
Bread (butter side out)

Heat the sandwich on low to medium heat (in the same skillet you used to fry the egg) until golden-brown. Be careful when flipping the sandwich so that it doesn't fall apart.

Let cool about 1 minute and enjoy!

    The French call this "Croque Madam," and it is delicious. The sodium can be cut down by using Ezekiel low sodium bread (0 sodium) and buying Trader Joes low sod. creamy tomato soup (1 c = 140 mg sodium, 90 calories). For someone on VERY limited salt/calories, this is a wonderful tasty option. TY! - 7/11/13

    This is definitely an improvement over the traditional grilled cheese sandwich. Very tasty, while still giving a grilled cheese flavor. I used an easy over egg, and sopped up the drippings with what was left of the bread. I will definitely make this for my wife this weekend. - 9/20/11

    How about instead of a fried egg a 3 or 6 Tbsp egg white omelette? Instead or regular cheese, veggie cheese (like the Go Veggie products)?
    I bet we can lower the sodium and carbs and it will taste great as well! How much would be the total calorie and Fat & sodium count??

    O.K.
    I cut the butter in half, reducing the fat and sodium. I also tried it with caramelized onions for more of a flavour punch. However, you can't add soup and be under 400 Cal.s - 9/20/11
