Ingredients
-
1 pound ground turkey
1 egg, beaten
1 cup tomato sauce
1/4 cup Italian bread crumbs
1/4 cup freshly grated Parmesan cheese, plus additional for topping
1/2 red pepper, chopped
1 small onion, chopped
1/2 packet of Good Seasons Italian dressing mix
1 (heaping) teaspoon crushed red pepper flakes
salt and pepper
Directions
Preheat oven to 400. Generously spray muffin pan with cooking spray.
Combine all ingredients in a large bowl and mix using hands until well blended. Using a large spoon, generously fill each muffin slot and sprinkle each muffin with additional Parmesan cheese.
Bake for 25 minutes or until a light crust has formed on each muffin.
(Makes 12 muffins)

Very good! Spicy! I omitted the freshly chopped red peppers. They do initially come out of the oven with lots of juices from the turkey, but this soaks back in - you could use less tomato sauce if this is bothersome. Even better reheated! Tasty all the way around, even picky hubby liked them! - 4/22/09

I may these tonight and thought they were delicious. I cut down a little on the tomato sauce and used some crushed red pepper/black pepper herb that I had. I thought at first there was a little too much fresh red pepper but changed my mind after 2nd one. HAHA Also used Parmasean/Ramano cheese. - 3/11/09

I made these into 6 servings and added paprika, garlic powder, and italian seasonings. I substituted mozzarella for parmesan and omitted the italian mix. Great flavor and portioning but next time I will use half the tomato sauce, they were a little too moist. Great recipe, will make again! - 5/23/09

Very yummy! I used just a couple of shakes of ground red pepper instead of the crushed red pepper...Other than that, everything just the same...I did actually have 2, but that with a half-cup of rice and a salad landed me just a tad over 300 calories for the whole meal...Pretty awesome, I'd say. - 4/1/09

Made this for the first time and my picky family LOVED it! I substituted with organic lean ground beef and Asiago cheese since I didn't have any Parm cheese or ground turkey. I also used hot chipotle Panko bread crumbs so I didn't use as much crushed red pepper flakes. Will definitely make again! - 11/11/13

I was a little skeptical of these, but I absolutely loved it! It took me about 35 minutes to get them fully cooked, and the grease was floating on top of the muffin pan, but after letting them sit for a few minutes, a lot of it soaked back down into them, keeping them moist. Will make again! - 12/10/11

Not a meatloaf fan but WOW! These are AMAZING! I agree that they were juicy at first.I won't cut back the tom. sauce next time b/c what I changed this time worked well. I transferred them to a cookie sheet after the 25 min. and broiled them until darker. This gave the whole outside a nice crunch! - 3/28/11

Loved the flavor! i only used 2/3 of tomato sauce but next time will use even less. the insides were still a little too mushy for my liking...other than that it tasted amazing! lined bottom of cups with circles of wax paper.make sure mixture covers it totally & they pop right out when ready to serve - 3/17/11

These were much tastier than expected. I used a 99% lean turkey, using the 1 Cup of tomato sauce kept them very moist inside. I did however make a few small changes. First, based on the recommendation of another I replaced 1/4 oats in place of bread crumbs. Second, I used a 1/2 envelope dry ranch. - 2/9/11
