Introduction
Not your basic yams. Not your basic yams.Ingredients
- 2 lbs. sweet potatoes
- 1 teaspoon olive oil
- sprinkle of lemon juice and rosemary
Directions
1. Wash and cut sweet potatoes into sticks or wedges.
2. Place potatoes in a bowl and toss with oil, then spread out onto a baking sheet and sprinkle with rosemary.
3. Bake about 30 minutes at 375° F, or until browned and tender. You may want to turn potatoes over half way through baking time.
4. Sprinkle with lemon juice, if desired.
Serves 6.

Delicious. The combo of rosemary and sweet potatoes is great. I recommend letting the rosemary sit in the oil in the bowl for a few minutes, and then tossing the sweet potatoes in that mixture. This way the rosemary sticks well to the potatoes and the flavor has a chance to bloom in the oil. - 3/15/07

I TRIED THE BAKE SWEET POTATOE FRIES LAST MONTH FOR THE FIRST TIME AND I ADDED A PITCH OF CAYENNE PEPPER, GARLIC POWER, SEA SALT AND BLACK PEPPER ALL MIXED TOGETHER AND SHOOK THEM UP IN A BAG LIKE YOU DO CHICKEN THEN PLACE THEM IN THE OVEN UNTIL CRISPY AND BROWN...MAKE YOU WANT TO SMACK YOU MAMA!

These were just OK for me. My family thought they were so-so. I think it needed more seasoning, though I used salt AND fresh rosemary. Also, I steamed them in the microwave first for 5 minutes, but it still took about 20 minutes for them to crisp. Probably will use Yukon potatoes next time. - 6/3/11
