Number of Servings: 24

Ingredients

    1 cup creamy peanut butter (I like all natural Skippy)
    1 cup brown sugar, firmly packed
    1 large egg
    1 teaspoon baking soda
    1/2 cup semi-sweet chocolate chips

Directions

Preheat oven to 350.
Combine all ingredients except chips until well blended (seriously, my cookies still had some sugar graininess).
Add chips.
Drop slightly rounded teaspoonfulls on ungreased cookie sheets (12 to a sheet) - do not flatten.
Bake 10 minutes or until puffed and golden. Cool on wire rack for at least 5 minutes before removing from cookie sheet (they will be very soft).
Makes 24 - 30 cookies

    I love this recipe. It's super easy and I often make it to bring to parties so I can have a GF treat. No one ever realizes there is no flour and everyone loves them. I use granulated sugar & don't get the grainy texture. Tip: use parchment paper so they don't get glued to the cookie sheet. - 1/16/09

    Perfect gluten free cookie. I used Teddie PB and Enjoy Life dairy and soy free chips. I may try almond butter next time. Using the parchment paper definitely helps. - 3/8/13

    Is the nutritional information correct? How many cookies is one serving? - 7/5/08

    The nutritional information is correct. The ingredients make 24 servings. That can be 24 average sized cookies, 12 hugs cookies and only eat half or 48 little cookes. Make them however big you want but remember 1/24 of the batter is a serving.

    These are okay. They tasted decent at first but by day 2 they were chewy. By day 3 they were too chewy to really be edible. So I threw most of them away. - 7/4/12

    these were easy, tasty, and low calorie (considering the size of the final product), I was glad when I took them out of the oven and they had puffed up however while waiting for them to cool they fell. This didn't seem to hamper the flavor and I wil be making these again - 5/12/12

    I made these for a friend who has a gluten allergy and tried them out on my husband and a friend. We all had a hard time getting past the texture (the brown sugar was gritty, even though I mixed them for a very long time) but the taste was excellent. - 10/12/08

    what holds the cookies together and prevents them from melting? Is their a wheat flour alternative that should be used? - 5/5/08

    I am not sure what holds them together but no, there are no more ingredients. You can even make them simpler with 1 cup sugar, 1 cup peanut butter and 1 egg but I liked this recipe better.
