Introduction

A homemade sauce, great for pasta. A homemade sauce, great for pasta.
Number of Servings: 4

Ingredients

    6 medium tomatoes
    1 tbsp extra virgin olive oil
    2 cloves garlic
    1 large stalk celery
    1/2 cup carrots, strips or slices
    2 tbsp shallots, chopped
    Salt
    Pepper
    Mixed herbs

Directions

Crush garlic, finely chop shallots (can substitute red onion), thinly sliced celery, sliced carrot.
Heat olive oil in pan at medium, then add garlic, shallots, carrots and celery. Cook until aromatic.
Chop tomatoes and add to pan. Add salt, pepper and herbs (suggestions: basil, rosemary, thyme, crushed red peppers) to taste.
Cook at med-low until tomatoes have broken up and sauce has reached desired consistency. Serve over pasta or chicken.

    I made this recipe tonight and cooked both noodles and rice. I had it with rice and it was absolutely deliscious! I made it exactly as written and will continue to do so. It was perfect as I had some over ripe tomatoes and what a perfect way to use them and not waste them. - 9/1/10

    Awesome sauce! I used the recipe to can my own fresh tomatoes out of my garden. Used the sauce to make chicken parmesean and it was yummy! You can trim the fat even further by using olive oil spray. - 7/24/07
