sautee onion in olive oil until soft (about 10 minutes), add garlic and cook for 1 more minute. Add sweet potato & cabbage, cover and cook for a few minutes. Add juices, salt, ginger, & tomato. cook for about 15 minutes or until potatos are tender. Add in okra and cook for 5 minutes. Stir in peanut butter. Add more juice if stew is too thick. Serve over brown rice or other whole grain.
