Ingredients

    2 small onions, chopped
    3 cloves of garlic, chopped
    3-4cups of collards, shredded or chopped
    3 cups of winter squash, like butternut, or sweet potato, peeled and cubed
    3 cups tomato juice
    1 cup apple juice
    2 tsp chopped ginger root
    1/2 cup natural peanutbutter
    1 tsp red pepper
    1 tsp salt (or to taste)

Directions

In a large soup pot, saute onions and garlic in olive oil until translucent.
Add tomato juice, apple juice, ginger, red pepper, squash and collards.
Cook on medium to high heat for about 30 minutes or until collards and squash are soft, or the texture you prefer.
Add peanut butter and stir, cooking for 5-10 more minutes.
Add salt if desired.
