Ingredients

2 lbs. beef cubes
Flour
1/2 teaspoon nutmeg
1 tablespoon chili powder
4 onions (medium sized)
1 clove garlic
3/4 cup tomato paste
6 cups water
1/2 cup chunky peanut butter
2 T. Oil
Optional: Red Pepper
Directions
1.In large heavy kettle heat 3 T. Oil
2.Add: 2 lbs. beef cubes, 1" or smaller, rolled in flour
3.While browning add: 1/2 t. Nutmeg and 1 T. Chili powder
4.When meat is browned, add: 4 medium-sized onions, sliced; 1 clove garlic, minced; 3/4 cup tomato paste; 6 cups water and Red pepper, if desired
5.Simmer until meat is tender. A half hour before serving, heat in small saucepan: 1/2 cup chunky peanut butter and 2 T. Oil
6.Stir over medium heat 5 minutes. Add peanut-butter mixture slowly to beef stew and simmer over low heat 20 min. Serve over rice.
