Introduction

These muffins are sweet and chocolatey; you'd never guess they're low fat! These muffins are sweet and chocolatey; you'd never guess they're low fat!
Number of Servings: 12

Ingredients

    1 c. old fashioned rolled oats (not instant)
    1 c. non-fat milk
    1 c. whole wheat flour
    2/3 c. Splenda brown sugar
    2/3 c. unsweetened applesauce
    2 egg whites
    1 tsp. baking powder
    1/2 tsp. baking soda
    4-6 tbsp. unsweetened cocoa powder
    1/2 tsp. salt
    1 c. dark chocolate chips (I like Ghirardelli)

Directions

Soak the oats in milk for about one hour.
Preheat the oven to 400 degrees and then spray the muffin pan with cooking spray.
Combine the oat mixture with the applesauce and egg whites, and mix until combined. In a separate bowl, whisk the dry ingredients together. Add the wet ingredients to the dry mix until just combined. Add the chocolate chips. Do not over-mix of the muffins will be tough. Spoon the mixture into the muffin pan, forming a total of 12 muffins.
Bake for 20-25 minutes, or until done. Remove from pan and enjoy.

    I made these, used real brown sugar, only 1/2 cup, and 1% milk, and only 1/2 c. of choc. chips. Chips were 60% cacao and the cocoa powder was hersehy's dark. I made 15 muffins, which, with the changes I made, came out to 119 per muffin. They were very good! Dense, moist, dark chocolate, not too swee - 3/14/08

    I only used a 1/2 cup regular brown sugar, 1 whole egg, 1/2 cup chocolate chips, and I added 1 tsp cinnamon and 1 tsp vanilla. I baked them for 18 minutes. Delicious! My modifications made 12 muffins at 148 calories a piece. - 10/19/08

    The chcolate lovers in the family liked these very much. They're not too sweet, and definitely have a dark chocolate taste. I used 1/2 cup brown sugar instead of the Splenda, 1 egg instead of the egg whites, and only 1/2 cup Ghirardelli chips. I calculated a decrease per muffin of 50 calories. - 2/3/09

    Wonderful for a chocolate craving. At the suggestion of a friend who said they were good but "the oatmeal makes them taste like diet food", I chopped the oats in a blender before soaking them in the milk. You hardly even notice the oats that way. - 8/6/08

    I made these and took them to my Weight Watchers meeting. They were a big hit. I made mine in mini muffin tins and got 48 out of the recipes. They work out to 1 point each. I would make these again and again. Great for that chocolate fix. - 3/13/08

    This is a great recipe. I used 1/2 cup brown sugar not Splenda, and only 1/2 cup of semi-sweet choc chips. I baked mine in the microwave and used silicone muffin cups. For a 1100 watt microwave cook on high for 2.5 minutes for 6. - 6/24/08

    These were wonderful! I used instant oats, which worked great. I substituted the cocoa powder with Chocolate Whey Protein powder ... used Nestle's 65% cacao dark chocolate morsels and threw in a handful of walnuts.     This is delicious!!! I keep them in the fridge and pop one in the microwave for 30 seconds and it comes out all soft and melted chocolate. Definitely satisfies the chocolate cravings. - 10/29/08

    Really good. Didn't use the chocolate chips,instead used a small container of lowfat chocolate pudding. Decreased the sugar to 1/2 cup and ended up with a 101 calorie muffin.
    It's now a few days later and made them for the 2d time. This time I added frozen raspberries and they were even better.

    OMG. So, so good. I tasted the batter, and got nervous they would not be good, baked them up, and again OMG. Tastes like you went to Starbucks and bought a chocolate cupcake.     I am a chocoholic and I absolutely loved this recipe!
    Dark chocolate just happens to be my favorite, so this tasty muffin helped with the early morning cravings. It was simple to make and fun to eat. It went great with a glass of cold milk!

    Please click on the Ingredients Details and see that that the nutrition was calculated by using 12 Hershey dark chocolate kisses. That has far fewer calories than a cup of dark chocolate chips. I made the recipe using the 12 kisses, and it wasn't enough to make it as tasty as I hoped. - 3/29/08

    This is a great muffin recipe. Leave out the chocolate chips or at least cut back to 1/2 cup & save quite a few calories. I used 1/2 the Splenda & they were still good. - 3/13/08

    These muffins are very good. However, I did as some others suggested, and used half the chocolate chips, 1 whole egg, and 1/2cup brn sugar. I ended up with 14 muffins. If anyone buys the weightwatchers chocolate muffins..these are much better and more economical. I'll be making these again! - 8/10/09

    These muffins were very good. I made these using vanilla yogurt in place of the applesauce, and since I had no regular milk on hand, I used chocolate soy milk. They came out very tasty, a little chewy. I think next time I will make them in a mini muffin pan, for bite-size treats. - 7/4/09

    I didn't have splenda brown sugar on hand, so I used another brown sugar substitute. The muffins had a bit of aftertaste. They were still really good. I'm going to try them again with splenda - hopefully that will resolve the aftertaste issue. Everyone loved them anyway! - 3/28/08

    Wonderful chocolate fix without the guilt. I found it made 18 cupcakes which helps lower the calorie count. The texture was a little "meaty" but the addition another user suggested of sugar-free chocolate pudding might help that. - 2/2/09
