Introduction

This prize-winning tomatillo salsa will turn any meal into a fiesta! This prize-winning tomatillo salsa will turn any meal into a fiesta!

Ingredients

    1 lb tomatillos, husked and washed
    3 jalapenos
    1/2 cup chopped onion
    3/4 cup fresh cilantro leaves
    2 T fresh lime juice
    1 T cumin
    salt to taste

Tips

This is also yummy in soups or over enchiladas!


Directions

Place the tomatillos, jalapenos, and onions in a saucepan and cover with water. Simmer until all veggies are soft and the tomatillos' skins split.
Drain and add all ingredients to a food processor. Pulse then puree until smooth.
Refrigerate up to two weeks.

    I use a recipe very similar except I use the green tomatos from the end of the season and add 2 cloves of garlic per jar. Roast the tomatoes, onions, garlic and peppers under the broiler for about 5 minutes untili blackened. It really adds a different flavor - 12/17/12

    Very Good Salsa! I increased the jalapenos, added 2T fresh oregano and some garlic. To save time, I put the tomatillos, onion, garlic, cilantro, and oregano in the food processor before cooking. I then transferred it to a pan, added the remaining ingrediants. Simmered for 20 min. after boil. - 1/11/09

    1/2 cup jalapenos with seeds? Really??? I'd just DIE!!
    I use 6 Serrano peppers and up to 2 SEEDED jalapenos, to taste.
    I've never used onions, but I bet that it's DELISH!!

    This is great! I couldn't find any fresh jalepenos at the store so I used a serrano pepper instead. I'm don't care for a lot of heat, so I just used one pepper and took the seeds out. Came out perfect. Thanks for sharing! - 10/19/08

    Toss it in the crockpot on low for a couple of hours, with 3 cloves of garlic, lime zest and sans cumin. Throw it all in the blender. I can't eat enchiladas or tamales without it. - 3/8/15
