AWESOME recipe. I too added black beans and tomato and used ff cream cheese for half the cheese. Then chilli powder and cumin. But my two boys loved them. They said I could have evn made them a little more spicy. So next time I think I will add some chilli's. I had no leftovers, 2 thumbs up!!!

Delicious! I made these for dinner the other night and there are no left overs - and this was a tough audience of enchilada fans. The only complaint was they needed more cheese, but that they were awesome nonetheless! I did add in some black beans and some famous Hatch green chili. Excellent! - 1/7/09

I made this tonight for dinner and it was good. When I make it again I might add a few more veggies and a little less spinach (but still have the spinach as the main veggie). The chopped cilantro added a lot of taste in the dish. We added light sour cream on top to make it not as spicy for the kids. - 4/1/08
