Ingredients

    1 package frozen raw spinach, thawed
    2 cups shredded cheese
    1 onion chopped
    1 Tbs Cilantro
    large can of Enchilada Sauce
    12 corn tortillas
    salt and pepper to taste
    1/2 c cheese


Directions

mix onion, spinach,cilantro and cheese. Pour small amount of enchilada sauce in the bottom of a 9x13 pan and the rest in a 8x8 pan. Coat the tortillas in enchilada sauce by dipping them in the 8x8 pan. Scoop spinach and cheese onto dipped tortilla and roll. Place rolled tortillas side by side in 9x12 pan. Pour remaining enchilada sauce over rolled tortillas. Sprinkle with 1/2c cheese. Bake in oven at 350 degrees for 30-40 minutes.

    Soooo good! My boyfriend and I loved these! I sauteed the onions briefly first and added a can of black beans (drained, rinsed), green chiles, and 1 tsp each of cumin and chili powder to the filling. Definitely making this again! I'm curious how these would be with flour tortillas... - 7/17/09

    I threw in some black beans and replaced some of the cheese with NF cream cheese. Very yum. The only change I'd make is either cutting down to half an onion, or else caramelizing at least half of the onions. The taste was pretty overpowering. - 1/12/09

    AWESOME recipe. I too added black beans and tomato and used ff cream cheese for half the cheese. Then chilli powder and cumin. But my two boys loved them. They said I could have evn made them a little more spicy. So next time I think I will add some chilli's. I had no leftovers, 2 thumbs up!!!

    We enjoyed this recipe. I used 8 oz. of fat free cream cheese for 1/2 the grated cheese inside. This would be good with some, mushrooms, shredded chicken and taco seasoning or cumin. Any suggestions on other veggies to add? - 11/15/08

    LOVED THIS ONE! The only thing I would recommend is to note what size of package of frozen raw spinich. I got a large one and it made way to much stuffing for the tortillas. - 3/12/08

    I also cut down on the onion, and added some spices. I used pinto beans as a side one night, and black beans another night.

    This recipe is VERY filling. You don't feel deprived at all!

    best enchiladas I have ever had. I used wheat tortillas from Trader Joe's and the Trader Joe's enchilada sauce. So yummy! I also only used 1/2 an onion. Both my children loved this meal too. I will for sure be making this again! - 1/6/10

    I agree with chpperchic - note what sizes to be used. Also, would recommend you warm the tortillas before tryig to roll or they will crumble! When my girlfriends and I made this we added ground chicken with taco seasoning. It was awesome! - 4/5/08

    I made this tonight for dinner and it was good. When I make it again I might add a few more veggies and a little less spinach (but still have the spinach as the main veggie). The chopped cilantro added a lot of taste in the dish. We added light sour cream on top to make it not as spicy for the kids. - 4/1/08

    I made this on a work night. It was fast and easy. I don't think I needed to cook it for 35 minutes but it was still yummy. It would also be good if you add some ground turkey or something. I added some leftover chicken to some of mine. I would recommend. Thanks for the recipe. - 3/13/08
