Ingredients

    1 tbs diet margarine
    1 1/2 lb lean cooked smoked ham cut in strips
    1 lage onion sliced
    1 lage green pepper sliced
    2 C unsweetened canned pineapple chunks in juice
    2 tbsp cornstarch
    1/2 tsp salt
    pepper
    1 tbsp soy sauce

Directions

Melt margarine in saucepan, add ham onions, green pepper and saute over moderate heat. Drain pineapple reserving juice. Add water to juice to make 3/4 C. Combine cornstarch, salt, pepper and soy sauce with pineapple liquid. Add to ham mixture cook till sauce thickened, stirring constantly. Add pineapple.

    Great dinner, I ended up wrapping the Stir fry in a wheat tortilia, sprinkling a tsp of american chese, wrapping the stir fry and baking for 20 minutes at 350, I also added spinage to the list took out the butter and used a 2 tsp of olive oil . My kids loved it! - 3/9/12
