Ingredients

    1 pkg (6oz) low sodium stuffing mix for chicken
    1-1/2 lbs bonless skinless chicken breast, cut into 1 inch pieces
    1 can (10 3/4 oz.) reduced-sodium condensed cream of chicken soup or cream of onion soup
    1/3 cup fat free sour cream
    1 bag (16 oz) frozen mixed vegetables, thawed and drained
    1 cup hot water

Directions

PREHEAT oven to 400*F sprinkle 1/2 cup of the dry stuffing mix evenly onto bottom of 13x9 inch baking dish; top with chicken.
MIX soup, sour cream and vegetables; spoon over chicken. Set aside.
ADD hot water to remaining stuffing mix; stir just until moistened. Spoon over vegetable mixture.
BAKE 30 mins or unit chicken is cooked through.

    added a dash of milk and some onion powder, garlic powder, paprika and italian seasoning to the mix---and pepper. Sprinkled a little chhese on top--b/c everything is better with cheese. yum yum. would make agian. - 8/18/09

    Definitely needs to be cooked an extra 10 minutes. Also, if you use a glass casserole dish make sure to spray it first. - 3/6/08

    We enjoyed this very much... i bought the wrong frozen veggies, cauliflower didn't taste right in this, but I will get the right veggies and definitely make it again. Thanks for sharing - 2/4/08

    This was good. I made this with 3 chicken breasts pounded to an even thickness instead of cutting them up. Reduced heat to 350 and cooked for an hour. I also added more of the sour cream to make it more moist and it worked out well. Will make again, thanks for posting! - 1/1/10
