Introduction

These muffins are so delicious, and no oil is used! It is denser then the typical banana bread because of the oats, but my entire family loves it, including my 1 and 3 year olds! Number of Servings: 24

Ingredients

    1/4 cup butter or margarine
    1/2 cup brown sugar
    1 egg, beaten
    1 cup uncooked Instant Oats
    4-5 ripe bananas (about 1.5 cups) mashed
    1 tsp vanilla
    1 1/2 cups flour (I use 3/4 white, 3/4 whole wheat)
    2 tsp baking powder
    1/2 tsp baking soda
    1/2 cup nuts or chocolate chips

Directions

Makes 18-24 muffins, or one full loaf.

Cream butter and sugar until light. Add egg and mix well. Stir in oats, bananas and vanilla. Conbine the remaining ingredients in a bowl and add to the first mixture, stirring just enought to moisten the flour. Grease and flour baking pan or use muffin cups.

Bake at 350 for 20-25 minutes for muffins or 1 hour for loaf.

    Gorgeous little muffins. I used mini muffin tins and made 24 plus had enough left over for a mini loaf which would have been approx another 6 mini muffins. Super cute! I made them with chocolate chips and might use less next time too. My 4 year old loves them. Nice and moist. - 7/23/11

    I really really liked this recipe. The muffin is so moist, I enjoyed the flavor the oatmeal added to the muffin. But instead of chocolate chips or nuts, I added blueberries. I would definately make this recipe again! :) - 7/25/08
