Introduction
These muffins are so delicious, and no oil is used! It is denser then the typical banana bread because of the oats, but my entire family loves it, including my 1 and 3 year olds! Ingredients

1/4 cup butter or margarine
1/2 cup brown sugar
1 egg, beaten
1 cup uncooked Instant Oats
4-5 ripe bananas (about 1.5 cups) mashed
1 tsp vanilla
1 1/2 cups flour (I use 3/4 white, 3/4 whole wheat)
2 tsp baking powder
1/2 tsp baking soda
1/2 cup nuts or chocolate chips
Directions
Makes 18-24 muffins, or one full loaf.
Cream butter and sugar until light. Add egg and mix well. Stir in oats, bananas and vanilla. Conbine the remaining ingredients in a bowl and add to the first mixture, stirring just enought to moisten the flour. Grease and flour baking pan or use muffin cups.
Bake at 350 for 20-25 minutes for muffins or 1 hour for loaf.
