Introduction

Tasty sugar free mixture of cranberries, apples, celery and pineapple. Tasty sugar free mixture of cranberries, apples, celery and pineapple.
Number of Servings: 8

Ingredients

    1 large box gelatin (pick a flavor)
    1 cup hot water
    2 - 3 pkgs sugar substitute
    1 tsp lemon juice
    3/4 cup unsweetened pineapple juice
    1/4 cup water
    1-1/2 cup ground cranberries
    2 apples, diced
    1 cup drained, unsweetened pineapple
    1-2 stalks celery, diced

Directions

Dissolve gelatin and sugar substitute in hot water.
Add lemon juice, pineapple juice, and 1/4 cup water.
Let set. Stir in fruits and celery.
Pour into a mold. 1/8 equals 1 serving.
Hint: To grind cranberries freeze first, then put into blender/food processor and chop.

    Great recipe but I modified it a bit. All the fruit is too much for 1 box of jello - could add another small box to help the ratio. I did use one large box of jello and cut it down, using 3/4 of an apple, 1 stalk celery and I added a handful of dried cranberries with the pineapple. - 8/29/08

    Incredible!
    My mom had a similar one too--lime jello with pineapple chunks, grated carrots and cut walnuts. I wonder why these things always came out for the holidays? - 6/6/09

    I definitely going to try this jello salad. I like sweet cherry jello with apple, pineapple and celery in it. Yummy. So this ought to be really good with cranberries. - 9/7/08

    My mother used to make a similar recipe years ago. I think she used whole cranberry sauce and I seem to remember that it also contained walnuts. - 8/23/08
