Ingredients

    2 cups prepared brown rice
    1 teaspoon canola or olive oil
    1 small onion, chopped
    2 cups sliced mushrooms
    1 teaspoon fresh thyme
    salt and pepper to taste
    1 can (14.5 ounces) white beans, drained and rinsed


Tips

This dish goes great with beef.


Directions

Reheat the brown rice.
Meanwhile, heat a medium skillet over medium-high heat, add the oil, then the onions. Cook for three minutes, then add the mushrooms, thyme and black pepper. Cook for five minutes, until the onions are starting to turn brown and the mushrooms have darkened in color.
Stir in the beans and rice, and cook another two minutes.
Remove from heat and serve immediately.

    I am making this right now, didn't have the white beans though; nor, fresh thyme, but ground Thyme .. my sister thought I should use only half the amount called for since it was ground, do you agree? So, far the mushrooms are pretty tasty!!! - 2/13/13

    I always make a big batch of brown rice to keep in the frig and use all week long since it reheats so well. This is a great way to turn that rice into a quick nutritious meal. Frankly, I will pair this with some steamed veggies or a salad and use it as an entree. - 5/11/13

    Umm, "one package Uncle Ben's Ready Rice?" What? How much rice is that in the REAL world? So sorry you are not encouraging real cooking. Preparing real brown rice takes NO more effort. Put it on for 45 minutes and forget about it. Canned beans? What is this? C'mom SparkPeople! - 2/20/13
