Ingredients

    2 boneless, skinless chicken breast halves
    1/2 cup salsa
    1/2 can cheddar cheese soup or nacho cheese soup (condensed)
    1 1/2 tsp taco seasoning
    1/4 cup light sour cream

Directions

Lay chicken in bottom of 1 1/2 or 2-quart slow cooker. Sprinkle taco seasoning over chicken. Stir together salsa and cheese soup in bowl and pour over chicken. Cook on low 6-8 hours.

Remove stoneware from slow cooker with pot holders, take chicken out and shred with fork. Put chicken back into stoneware, then stir in sour cream. (Note: Depending on the tenderness level of your chicken, you may be able to shred it by simply stirring it inside the stoneware.)

This is great served over rice or used as an enchilada filling.

Note: I reduced the taco seasoning compared to the original recipe in an attempt to reduce sodium, but I think the author has lowered the nutrition facts to use only half a packet without changing the instructions, because the sodium really didn't change.

    This was bettern then the first recipe posted. My kids love cheese so I added light cheddar cheese instead of canned soup and corn and beans. This was just enough for the three of us - 7/21/08

    This was super easy to make and my husband and finicky 18-year-old loved it, even both going back for seconds. We served it on whole-wheat roll-ups with lettuce, tomato, cheese and onion like a taco. I made this mistake of putting sour cream in right away and it was fine. Thanks for this recipe! - 7/2/08

    I made this for my family and they loved it. I didn't add the sour cream,but I did add one can each of black beans, sweet corn, and diced tomatoes. Then I made mashed potatoes with the sour cream and served the stew on top of the potatoes. Delicious! - 4/29/10
