    Very Good
    I had leftover couscous and used that in place of the rice. Used 5 egg whites, added some chopped bell pepper and topped with salsa. - 12/1/08

    I'm planning to make this with leftover brown rice for increased fiber and reduced glycemic index count. Some broccoli florets sauteed in olive oil would boost the nutrition. - 11/11/08
