Introduction

Number of Servings: 18

Ingredients

    2-10oz packages frozen chopped spinach
    1/2 cup mushrooms, sliced
    2 tbsp butter
    1/4 cup butter
    1/2 cup light mayonnaise
    1/2 cup reduced fat sour cream
    1/2 cup Parmesan cheese
    8.5 oz bottle of marinated artichoke hearts (drained)
    3 tomatoes
    1/2 cup Italian-style bread crumbs
    Salt and pepper to taste

Directions

Cook spinach and drain.
Saute' mushrooms in 2 tbsp butter.
Combine mayo, sour cream, and cheese.
Stir in artichoke hearts, spinach, and mushrooms.
Season to taste with salt and pepper.
Pour in greased 13x9 inch dish.
Slice tomatoes and place on top in one layer.
Saute' bread crumbs in 1/4 cup butter and sprinkle over casserole.
Bake at 325 degrees for 20 minutes.

    I agree with others that it serves approx. six and replaced butter with olive oil, marinated artichock with brine soaked artichock and added garlic. Next time I'll use fresh spinach. - 2/20/09

    You can save calories by going with canned or frozen artichoke hearts, instead of the marinated kind. Then add a little extra garlic, or cayenne pepper, or something to spark up the flavor. - 2/20/09

    I would definitely cut out all the butter. The mushrooms could easily be sauted in a cooking spray and if you substitute the butter in the bread crumbs for a fat free or light version you could enjoy a much bigger serving without the guilt. - 10/28/08

    It sounds fabu but fat. I'll used artichokes in brine and not sautee the breadcrumbs. Actually, it probably doesn't need breadcrumbs if served as a dip. - 1/27/09

    This was great! I tweaked it a bit and didn't use butter, olive oil to saute, plain yogurt instead of of sour cream, cherry tomatoes, lot's of spinach, regular bread crumbs which I seasoned myself. - 12/6/08

    Tasty, I cut out some of the butter. Only used a little for the rooms. Then rather than cooking the breadcrumbs in butter, I sprinkled the top with the breadcrumbs and sprayed them with Pam also "greased" the pan with Pam. Kids liked it as well. Will make it again! - 10/29/08

    this is fabulous. Problem is, it does NOT make 18 servings, which would mean that a serving size is only 2 TBSP. It's more like only 6 servings, so you need to multiply the calorie count and all the nutritional info by 3. - 10/28/08

    This sounds very good...but the butter for the bread crumb topping is 800 calories alone! Better to spray the bread crumbs with cooking oil and toss with some minced garlic and/or other seasonings to top the casserole and hence cut the calorie/fat count significantly! - 10/28/08

    I made this last night and loved it. I used fresh spinach and used Ms. Dash Italian flavored seasoning. It was great. The artichokes and the tomatoes with the spinach is yum! Erp..I did go over my calorie count abit for the day...but so worth it! Healthy too..you can do with less butter. - 8/5/09

    Sounds really great since I LOVE Spinach and Artichokes, however I agree with many and say that 18 servings is CRAZY! Maybe you should say what the serving size is....which is looking like maybe 1/2 a cup? (rough guess), definitely would not make a meal. ;P - 5/23/09

    I made this recipe and I thought it tasted a little too mayo-y. Then it could have been the brand I used (should always still with Hellman's! haha). Overall I would say this recipe was tasty and definitely worth giving a shot. - 8/5/09

    Begging everyone's pardon!! The calorie count is sitting right there and I didn't even notice it because I kept thinking it should be at the bottom. I guess in theory you could cut this up into tiny little portions but it is still unrealistic to expect 18 servings out of it. s - 12/13/08

    ooooo does not sound healthy to me at all. Especially since trying to lose weight I do not hide or weigh down veg in sour cream or glops of butter. I love spinach, I love artichokes, I adorrrrrrrrre tomatoes, but I much prefer them on their own or if they're combined -as a fresh salad!!! - 8/5/09

    I eat low carb so I changed it up to apply to my plan I think we Americans get use to 'big' porportions I found that it served about 12 We can use our own common sense here & adapt to a great idea for a recipe I personal think it is brave for anyone to create & add a recipe here kudos! - 7/24/09

    As a side dish I thought it was awful! I cut the amount of mayo, butter & sour cream and there was still too much "sauce" and not enough vegetable, plus the portion info is wrong. As a dip, it would be good, and the portion info correct. I'd cut the recipe in half if using it as a dip, though. - 12/13/08

    I think he meant, it serves 8. I'll sub butter w/olive oil (using less to saute crumbs) cut mayo by HALF and make it up by adding to sour cream, only sub sour cream w/plain yogurt. Also, sub Parmesan for Mozzarella, RINSE drained artichoke hearts, add garlic, and I should be good to go! THANKS!! :) - 12/14/08

    I'm looking forward to trying this recipe this weekend-I can buy FF herbed bread cubes here & crush those for crumbs.     This sounds devine! Because I am doing my best to go fresh & local, I will use fresh veggies & cook them ahead. Also, I will add a few seeds or nuts to add fiber & good fats. It will be a complete meal for me. I can not wait to try this! - 8/5/09

    This base is the foundation for our old family recipe for Scandanavian Fish Dish; I will try it with the veggies added in! I don't use butter, or breadcrumbs. Sprinkled with lemon or wine and nutmeg! Complete meal! - 10/28/08

    This sounds wonderful. My mom prepared this type of recipe before and she will be glad to know I found one we can substitute. I may try it with the way it is first, then make the decision.
