Ingredients

    1 1/4 cup flour
    1/4 cup Splenda Brown Sugar Blend
    1/2 tsp salt
    1/2 tsp baking soda
    1/4 tsp baking powder
    1 tbls canola oil
    1 large egg (beaten)
    2 large egg whites (beaten)
    3 bananas (medium to large)
    1 cup dry oatmeal

Directions

Preheat oven to 350. Stir together dry ingredients. Add oil and eggs and mix thoroughly. Mash bananas in separate bowl. Add bananas and oatmeal and mix well. Pour batter into sprayed loaf pan and bake until loaf top is firm to touch, 45 to 55 minutes. Remove from oven and cool in pan for about 5 minutes. Take out of pan and cool on wire rack for another 10 minutes.

    I didn't expect much but was pleasently surprised. I used 1/4 cup nuts which increased the calories by 20 and added 2 grams of fat. - 10/22/09

    I replaced 1/2 cup of the flour with whole wheat flour which usually causes my breads to be more dense. Still a good taste with a relatively low amount of sugar (I also do not use Splenda). - 4/19/09

    Wonderful. Produces a very dense final product-- like the most delicious brick imaginable. I used whole wheat flour and added 1/2 cup of walnuts (about 30 extra calories per serving). I will be remaking it with fewer walnuts and just a teaspoon of Black Walnut flavoring. - 4/16/08

    I made this recipe as muffins. THey were awesome! I actually got 12 muffins from the recipe, so the calorie count is a little lower. I would make it again for sure! - 10/27/07
