Introduction

Wonderful low fat, low cal way to prepare salmon! Wonderful low fat, low cal way to prepare salmon!
Number of Servings: 1

Ingredients

    1 salmon filet
    1 med. red bell pepper
    1 tsp. lemon juice
    1 clove garlic
    1 tsp. oregano
    1 tsp. rosemary
    1 tsp. marjoram

Directions

Combine all ingredients except salmon and pepper in a large bowl.

Transfer salmon to a large plate. Add liquid mixture and marinate while heating skillet, for just a minute or two.

Place salmon in heated skillet and cook for 5-6 minutes on each side, flipping only once. Remove salmon and place on a clean serving dish.

Add peppers to the liquid left in the skillet. Saute just until fragrant or to your liking. Pour peppers and lemon garlic sauce over top of salmon and serve.

Serves 2-3 (1 filet)

    Quick & Easy. Omitted peppers. Increased Rosemary to 2 tsp., lemon juice to 1 Tbsp., and added 1 Tbsp. olive oil. Everyone loved! (Like NaHa's) - 11/7/12

    I like this, but I agree with a previous reviewer that said a tsp of lemon juice isn't enough to marinate. It was more like a dry rub. - 11/12/11

    Very Good
    Modified the recipe as not a fan of salmon. Used Mahi Mahi. Added 6 oz. chopped mushrooms, some scallions and omitted the rosemary. Put the fish in individual foil parcels and spooned the red pepper mixture over the 3 parcels. Baked in 375 oven for 30 minutes. Great! - 10/26/11

    OK but not great. Recipe needs adjusting. How can you marinate anything in only 1 tsp. of liquid (lemon juice)? I ended up needing more like 1/4 C. or more of lemon juice. I also added onions and cilantro. Will look for some better salmon recipes before I'd make this one again. Not awful tho. - 2/15/10
