Number of Servings: 6

Ingredients

    1 cup of sliced fresh mushrooms
    2 tbls olive oil
    1 cup sliced onions
    1 clove of garlic minced
    1/2 cup butter
    1/2 cup flour
    tsp. salt
    4 cups milk

Directions

This creamy soup serves 6. Saute in the oil, the onions and then add garlic for a light saute. Add butter, flour and salt to make a roux. When thickened add milk gradually. Cook until bubbly and smooth. Add mushrooms and heat through. Salt and pepper to taste. Serve .

    Very Good
    I love thick soup and this was great. I did add some paprika to spice up a bit. Also I added steamed green beans to give a bit of color and add a texture. I'm going to freeze it so I hope that it tastes the same. - 11/4/12

    Way too creamy and think. Way too much of everything besides mushrooms and onions. I wouldn't recommend it. - 12/10/10

    O.K.
    Something is not quite right in the proportions of the roux. Perhaps less flour is needed. This is more like cream of mushroom soup in texture. I second monsyd2 on the salt and pepper. - 11/16/09
