Introduction

Great one pan recipe that the whole family will love! Great one pan recipe that the whole family will love!
Number of Servings: 10

Ingredients

    2 boneless, skinless chicken breasts
1 large jar of salsa (you choose the hotness)
2 cups of cheese (your choice)
    2 cups of frozen corn
1 can of red beans, rinsed
1 can of red beans, rinsed

Directions

Cook chicken until done. (I usually boil it as it makes it easier to multi-task). If you have a large skillet that is oven-safe, you can make this dish in one pan. If not, two is all you need!

Then, mix together: chicken, the whole jar of salsa, ONE cup of cheese, corn, and both cans of beans until well mixed. Cover.

Bake at 350* for 30-45 minutes. Sprinkle the remaining on top. Place back into the oven for an additional five to ten minutes.

I usually serve this dish with tortillas because they are filling. However, if you're having a Nacho Night, you could certainly use tortilla chips.

I bet this could easily be adapted to a slow cooker - save even more time, and really keep it to one pot. I'll try it out and let you know! - 5/15/09

Do you have to put salsa in it because I'm not big fan of salsa. I think I want to try it because I didn't get to try it yet - 7/12/15

The recipe sounds delicious, but you have "1 can of red beans, rinsed" down twice......I'm wondering what other type of bean you actually meant to include, if any? lol :)
