Introduction

This healthy low-sodium recipe is very easy to prepare. This healthy low-sodium recipe is very easy to prepare.

Ingredients

    3 cups white beans (navy, great northern, cannellini)1 Onion, chopped2 cloves garlic, minced4 ounces chopped chiles2 teaspoon Oregano1 1/2 teaspoon Cumin1/4 teaspoon Ground Cloves1/4 teaspoon Cayenne2 quarts (8 cups) water

Directions

Simply combine all of the ingredients in a large pot and gently simmer for 60 minutes.

Serves 6.

    Have this in the crock pot on high. Plan to turn down after an hour and leave on low all day till grandbabies are ready to eat ;>) I used 1 lb of dry beans which I think is the key to success with this recipe but then I am old and used to cooking from scratch - 2/7/09

    Way to watery I couldn't even eat it I tripled check this recipe to make sure I made it right. I feel it needs tomato in order to make it a better chili. - 5/19/09

    I think the key to this recipe is that you need to start with dried beans. I used Anasazi dried beans. I cooked them for 45 minutes first & then added the other ingredients & cooked for another 45 minutes. I added ch. celery, 3 Tbsp. BBQ sauce, 1/2 cup of pulled pork & doubled the seasonings. - 8/10/09

    I had to change this recipe to love it. I used half the amount of water, which also decreased cooking time. I used canned beans (two) and drained the liquid. Note: Using canned beans hikes up the sodium A LOT! I added about 1-2 tbsps of ketchup and it was perfect! I could eat this everyday. - 7/12/09

    I was pleasantly surprised at how good this tasted. I did add more spices, the ones I usually add - while still trying to maintain low sodium. I didn't drain all of the liquid from the beans, and I didn't use all of the water.

    I've made it twice now and will make it at least once a month.

    This was very tasty. I didn't have any chilis and added green salsa instead. Also added some chili powder as I feel the spicier the better. It was a little watery, more on the thick soup side, but I thought it was great for lunch and will definitely make again. - 5/13/09

    I read the comments while this was cooking. It was on the menu for lunch. I'm not into chili,but, I was willing to give it a try. It's not chili, too watery. I took top off of pot, mashed some beans, and added spinach (fresh). It thickened up bit. It's a soup. Not too good. - 3/27/09

    I enjoyed this recipe. I even gave some to a friend and she liked it. I used dry beans and cooked it for alonger period of time and cooked most of the water out of it. Delicous, I will make this again. - 7/31/09

    I made this last night. Had not read the comments. I used 3 cups of Chicken broth and maybe 3 cups of water and I thought... this does not look anything like Chili. Added another can of beans and cooked for a long time. It finally thickened up. Added diced chicken. Better the next day! - 3/11/09

    It was not what I expected. I did heat the garlic and onion in a very small amount of olive oil first, and I cut back on the amount water. Next time I will probably cut back even more. The flavor was really good though. - 5/18/08

    This is a good base reciepe. I changed it a little bit because I can't take real hot stuff. I didn't use the cloves, cayenne pepper, or the chiles. I added 8oz. of no added salt tomato sauce and maybe 2tsp. chili powder. I also used some sea salt. It came out great. I will use this reciepe again. - 10/2/07

    I started with dry navy beans and soaked them overnight. And I used less water than recipe calls for, because I could see when measuring 8 cups was going to be too much. I went a little heavier on the spices. Easy to make..I used the brown rice setting on my digital rice cooker. - 7/28/09

    I really liked this. I made it with canned beans and no added water. I poured off most of the liquid form the beans. I made it in a slow cooker. I really enjoyed the unusual seasonings. I would make it again. - 6/2/09

    Since I wanted chili, not soup, I used about a quarter of the water called for, and while the flavor was good, it was so spicy/hot I could barely eat it! I had to use sour cream to cool it off. It may have been so spicy because of the chili substitution I made, so I will add less chilis next time. - 12/22/09

    Since I'm a vegetarian this recipe got my attention. I have to say I'm not a fan of cumin but I tried it anyway. It was a bit strong for me so I tried it again without cumin and added extra garlic and liked it much better. - 11/17/09

    I used canned beans and realized afterwards I should have used dried ones. But I just added one package of taco seasoning mix and made it into bean soup - and my goodness was it delicious. And SO easy, especially if you use canned beans and make soup of it. this is something I'll make again. - 10/19/09

    It was good...added more spices but cut the water down. when the beans cooked fully I smashed up some of them in the pot and it made it a bit more creamier. - 12/21/09

    I made this after reading the ratings. I cut back on the water and added cornstarch to thicken. I didn't want to eat a chili soup. It was very flavourful I also added chicken breast strips. - 11/30/09

    Good idea, but not enough flavor for me. I used dry beans, added a can of tomatoes, some diced bell peppers, and a few other spices (onion powder, garlic powder, chili powder), and only used 4 cups of water. Turned out very flavorful and filling! - 8/8/09

    I, too, prepared this recipe and am a novice when it comes to cooking so when this chili turned out watery, I figured I did something wrong. Even with all the spices, it was bland tasting. I had some hot BBQ sauce open from lunch and added a tablespoon just to get it down. Only made 1/2 recipe- Yea! - 7/14/09

    Really bad ... I always eat everything and I didn't even bother ... cooked something else after putting this down the disposal. Like I say ... I eat and enjoy most anything but I think this recipe needs more directions and than just adding it all into the pot and cooking for 60 minutes. BAD BAD BAD - 7/12/09

    Guess I'm not a vegetarian at heart. I love all kinds of beans. However, this was too watery to be called chili and I couldn't stand the taste of cloves. It served the purpose of a good potpouri in the house while simmering. That's about all! - 6/6/09

    I used dried beans and added a can of diced tomatoes, as it isn't chili to me without tomatoes. I also cooked it longer than it called for, part of the time with the lid off to reduce the amount of liquid. It came out fine. - 5/28/09

    This recipe must use dried beans to work. I reduced the amounts, so I used 1 c. Dried white beans and 3 C. Water. I omitted the cloves, but added a spice rub. I cooked it in the crock pot on high for 4 hours. It made a wonderful lunch with a salad. Would definitely make again. - 10/22/16

    This tasted more like a watery soup and the wrong combination of spices. Not very flavorful, just spicey (and not in the good way).     I am a picky eater and I have made this a couple of times and I don't think it is bad. I would find it fine to be left in the menu because there isn't very many vegetarian or vegan options on the menu. So some people may like this they might not find it since it isn't on the menu. - 12/13/10

    You can replace the 2 cups of water with 2 cups of vegetable broth. Instead of putting it all in a pot at once. You need to sautee the onions and garlic and green chiles and add 2tbls of flour (thickens soup) and the spices into the sautee mixture. Add sautee mix to broth and beans. - 9/15/10

    Wish I had read the commenst first. Like alot of others I used canned beans. The recipe was way too watery and unedible. They should either take it off the menu or re-write the recipe. This was awful and a waste of food and money. I ended up throwing it down the garbage disposal. - 12/24/09

    Have to agree with everyone - way too much water, should be called soup not chili. I added some salt so that I'd eat it. Next time I think I'll take advice from others on here to add a can of tomatoes, half the water, some green pepper, and chili powder. - 12/7/09

    As I was putting the ingredients in the slow cooker, I realized that I was basically making bean soup, so I added a can of diced tomatoes and only 6 cups of water instead of the recommended 8 which seemed like way too much. It was still awful. There wasn't much flavour and my husband wouldn't eat it - 11/12/09

    I used the Quick Soak method (bring to a boil, boil for 2 minutes, sit for 1 hour). Put the beans in slow cooker with the rest of the ingredients except cut back the water and added only enough to cover. Cooked for 36 hours! Added 1 TBSP each seasoned salt, Frank's Hot Sauce and BBQ sauce. Edible! - 10/29/09

    I used dried beans and put it on in plenty of time for dinner at 6-ish. It took way longer than an hour. The recipe should have specified canned beans. Made something else for dinner tonight, but I'll try to doctor it up for tomorrow's dinner, as it has no flavor (other than spiciness). - 10/28/09

    I only 1 cup of white beans so I substituted and added 1 cup of red beans a half a cup of black beans and a half cup of mung beans. cooked and seasoned as described. add one table spoon of ketchup per serving and it is fantastic - 10/8/09

    so to fix a watery soup...add spice & simmer longer! I just made this soup and it was GREAT! Granted, it really did need a lot more spice, I about doubled the cumin and garlic, and added a good amount of pepper and my favorite hot sauce, but it was great! also added tempeh and smart ground...yum! - 9/19/09

    I added a small tomato (chopped) also, instead of the small amount of cumin listed, I added 2 tbsp. I couldn't do the low sodium thing so I added Goya Adobo con Cumin seasoning for flavor. I subbed crushed red pepper & black pepper for cayanne. It was very tasty! - 9/11/09

    used canned beans and 3 cans of water...after about an hour of simmering I smashed about a 1/4 cup of the beans and let it simmer for another 20 minutes. very spicy and filling... - 8/27/09

    It is definitely a recipe using dry beans not canned. I made that mistake the first time I tried it. If you use dried beans it comes out to a chili consistency. I also tried in a crock pot and added a cup or two less water and cooked it for 7 hours and it came out great. - 8/16/09

    Soup was very good, though left out the chilli peppers and substituted green peppers. We cooked onions, garlic and peppers in small dab of olive oil with cloves, sage, and basil until carmel like, then added 1/2 c of canned chicken breast, then the canned beans. Last the hot water. Had Oat Bread! - 5/28/09

    Same issues as the rest of the majority and I used dry beans. To salvage this meal I added some ground turkey, canned diced tomatoes and garlic powder, onion powder and even some seasoned salt. I used green pepper instead of chilis. After all that, I figured the nutrition and it still was fine. - 3/24/09

    This was ok. I ended up using 3 cups chicken stock to replace some of the water. I found that it was very watery once it was done so I ended up throwing some flour into the pot to thicken it up a bit. - 3/8/09

    followed original recipe and was to watery after alloted time and not very tasty. So put back on stove added can diced tomatoes and some frozen okra and few teaspoons of boullion and boiled (not simmered) for 15 minutes. It thickened up and had much better flavor - 2/12/09

    The only change I made to it was to omit the chilis (I don't like really spicy stuff) and I didn't like it. Way too watery and I used dried beans soaked overnight so the beans weren't cooked enough. With the rest of this I'm going to add more beans, cook it longer and mash the beans. - 2/10/09

    I'm glad I read everyones comments before making this dish it helped when it came to adding the water. I used a jar of beans and added 2 cups of water. I left out the cloves, couldn't find my green chilis and simmered only 30 mins. and added half stalk of celery with 10 baby carrots. We liked ok. - 2/9/09

    I'm making it, probably should have read others' reviews first. It smells really good, but after an hr+ of simmering, its like soup. I made a roux from the water and added that, still soupy. Added 1/2 a packet of chili mix, and veggie "meat" crumbles. AND boiling the heck out of it to evap. water. - 2/6/09

    This recipe is confusing, but can be salvaged. I used canned beans with their juices, NO water, and I added a whole can of chiles and doubled the cayanne. I threw it all in my crock pot and cooked on high for a few hours. It was still a little soupy but I found it very flavorful! - 2/5/09
