Introduction

Number of Servings: 12

Ingredients

    1 lb Ground Turkey (You could use all ground Turkey but I like a little beefy-ness)
    1 lb Lean Ground Beef
    1/2 c. raisins, chopped
    2 cups of cooked quinoa
    1 cup of Grated or minced carrots
    1 sm. onion minced
    1/3 cup of an egg substitute (i.e. EggBeaters)
    Dash of milk
    2 t. Worcestershire Sauce
    Large pinch of Oregano
    Salt
    Pepper

Directions

Preheat your oven to 450 F
Combine the meats, raisins, quinoa, carrots, onions, salt, pepper, oregano and Worcestershire sauce together, making sure it is well combined. Add the Egg substitute and a dash of milk making sure everything holds together. Take a muffin pan but DO NOT GREASE IT and distribute the meat mixture evenly into each cup mounding it a little ontop.
Bake in your oven for 20 minutes or until done, but make sure to cook them completely since we are using turkey.

I eat one muffin per serving and it is delicious!

    Added about 1 c celery. The raisins seemed a bit odd, but were GREAT! I ended up with almost 1/3 of the mixture left over after I filled my muffin tins... not sure if I should have packed more in each cup. BF loved it even if it was "healthy" :) Will make again for sure! - 4/18/11

    This is great! I didn't have raisins, so I used dried cranberries (nice tartness). I only had turkey, but next time I'll use the half turkey / half beef. Might add more seasonings, but that's just personal preferences. Definite winner! - 3/22/11

    These are good but my meat must have been extra lean because there was no grease. We felt they needed some sort of a sauce so I am using the leftovers in spaghetti sauce for spaghetti and meatballs this evening for dinner. - 7/8/10

    So good! I made the quinoa with chicken stock for extra flavor. I Couldn't really taste the raisins but it was fantastic with some brussels sprouts and ketchup. - 7/8/09

    Excellent, the raisins ARE a must. The only thing I would do different is to go with all ground turkey. Healthier and less greasy. Otherwise a big hit in the house. - 3/22/10

    This was absolutely delicious!! I left out the Beef, and cut the other non-meat ingredients in half to compensate. It was the best meat loaf I ever tasted. It didn't even need Ketchup! - 1/29/10

    Omg! These were so delicious. I had bought quinoa before but didn't really like the taste so this was a really good way to use up what I had left. My wife and Kids (who are the most picky children on earth) even liked these. The raisins added a nice sweetness. Thanx! - 4/2/08

    My husband puts quinoa in meat loafs, burgers, meat balls, etc. And I probably won't put raisins in it. But I have gf worcestershire sauce and can't wait to try this. - 5/30/12

    Hmm... for appetizers, use a mini muffin pan, and anything higher than 90% lean ground beef will most likely crumble unless you add more egg as a binder. - 5/9/13

    I wonder if this would be good with SOSMIX (vegetarian) and miso stock. I think I wouldn't usual recipe style by choosing the thing as I like as my options and roughly following the idea. A spark is all you need!

    Good but very crumbly - they fell apart when I took them out of the muffin tin. I used all ground beef (98% lean) and substituted low-sodium soy sauce for the Worcestershire sauce. Also added garlic. - 3/27/13

    Is Worcestershire Sauce gluten free? I am not sure but other than this the recipe is great. You can add some cooked lentils and minced carrots as well. I added the lentils instead of the quinoa as i do not really like it and used rice milk as like most gf persons I am latose intolerant. - 9/3/12

    i was weary of meatloaf w raisins but this was yummy! I would definitely make it again. I was missing carrots so had to omit them. I would add a spicey element next time too. - 7/24/11
