Number of Servings: 8

Ingredients

    8 collard leaves, thick stems removed
    1 block baked tofu
    1 can refried black beans
    1 cup chopped tomatoes
    1 avocado, mashed

Directions

Steam the collard greens until pliable.
Layer ingredients inside greens, wrap like a burrito and serve.

    I used romaine leaves because it's what I had available. I also subbed salsa for chopped tomato, I feel it gave it more flavor and moisture. This made a perfect, healthy fats/high protein office lunch for me. Something I will repeat. Very quick and easy to prepare. - 3/12/14

    I use whole beans, leave the avocado in chunks, add garlic and onions, and leave out the tofu. I think I will add a boiled egg to the next one I make. - 4/20/16

    This is a favorite of mine that we used to entertain with while I was stationed in Korea. We would use the lettuce like a bun and put our ingredient inside. It can get sometimes, messy however good! Any type of lettuce will work. Love this and such a healthy alternative. - 3/9/17
